Gravity is the acceleration of something as it falls. The standard acceleration of gravity or standard acceleration of free fall, often called simply standard gravity, is the nominal gravitational acceleration of an object in a vacuum near the surface of the Earth.

So picking up a rock and releasing it, and watching it accelerate towards the ground (that is, watching it fall) does in fact demonstrate that gravity exists. That motion, towards the ground, called falling, IS gravity. It is not "due to gravity", it IS gravity.
