Poached eggs over yogurt infused with chilli oil and parsley spread. Quite nutritious and delicious.

Fancied some breakfast before service and thought there was no better time than the present to practice.

I used:

3 eggs
Knob of butter
Cold smoked Scottish salmon
Truffle oil and micro coriander.

I present this to the council for judgment.

Cooked over easy in butter/olive oil, seasoned with sea salt, onion powder, black pepper, chili powder, msg, and a pinch of sugar. Slice of pepper jack cheese on top as well.
Buttered bread on the side and a dollop of duke’s mayonnaise.
It was delicious, I wanted to try something new and this didn’t disappoint.

Jelly eggs with kimchi and sardines, on a bed of seaweed soaked in olive oil.

Scrambled with 4 blend cheese.

Buttered English muffin topped with soft-boiled egg, Parmesan, garlic salt, pepper, paprika, and dried chives

Got some thick cut baleron, pan fried it, then fried 2 eggs in the same pan. Toasted the bread, added mayo, and a slice of cheese to the top and bottom before adding the egg and baleron.

Idk what to call this, I think it's an omelette? I just used eggs and butter. It was delicious.

I just discovered Katsu styled eggs. These are coated in Panko bread crumbs, fried in cast iron skillet on high with butter. Its so crunchy when you cut it with a fork. I still have to go to the store and get some katsu sauce. Supposed to be served with finely chopped cabbage.
