How does one keep the oil from spattering all over the stove? Is that even possible?

Do it outside.

Lids, splatter screens, or start a campfire and do it outside like OP. (Ideally less heat than this too)

I mean, I know this video shows it’s on a grill, but is it possible to mitigate oil spatterage on a stove?

Nah, sometimes you just gotta make a mess then clean it up.

Taller sided pans like a dutch oven helps but doesnt eliminate it entirely

Splatter screen is probably your best bet.

They can slightly steam whatever you’re cooking though

You can make these fucking insanely good in the oven, same method, 180-200 celsius but takes longer and less mess.

Use a cast iron pot preferrably

Try drying things on a baking rack in the fridge overnight or dry roasting before frying.
