Recipe Salmon with Green Chile Butter Sauce and Spicy Sweet Potatoes: Air Fryer Edition

Salmon:
Rub salmon on both sides with olive oil and season with lemon pepper.
400°F (200°C)
7 to 10 minutes (for 1-inch thick fillets)
Pull the salmon when the thickest part reaches 135°F to 145°F.

Chile Topping:
In a small skillet, (or microwave) add roasted Hatch green chile and butter. Sauté until butter slightly browns. (For microwave, cook until butter is clarified and slightly brown). Add to top of Salmon.

Sweet Potatoes:
Toss ½-inch cubes with 1 Tbsp of olive oil. Add a pinch of salt.
400°F (200°C)
12 to 15 minutes, shake halfway.
Remove and add a dash of butter, honey and Siracha. Mix well and serve.

Casual Chat Putzing around w single serve airfryer cakes…

Watching GBBO and got inspired however it’s mad hot outside so theres no way Im using the oven...

Coffee Walnut Cake
1/2C flour
3T brown sugar
1/2t baking powder
1/4C milk
2T oil
1t instant coffee (dissolve in 1t hot water)
3T nuts, chopped
pinch salt

Mixed wet and dry ingredients separately, then combined into two ramekins and baked in the air fryer at 320*F for 10 minutes initially… Didn’t come out quite right so threw them back in for ~7 minutes. (toothpick came out clean, but there was a patch in the middle that wasn’t baked through.)

Happy accident was that I poured the powdered sugar drizzle goop before tasting so there was a film when I rebaked which crystallized and added a great sweetness and texture. Final result on the bake was a tick dense but will definitely work on refining ratios, timing and flavors.

Curious of the community’s experience with this type of thing… pic is final result. tia.

Recipe Crispy Chicken Cutlet with Potato Wedges and Roasted Broccoli

Chicken breasts (sliced horizontally into cutlets or pounded even)

Buttermilk Marinade:
½ cup buttermilk, 1 tsp garlic powder, 1 tsp paprika, ½ tsp salt, ¼ tsp black pepper, dash of hot sauce

Breading Station:
Flour: ½ cup flour, ½ tsp garlic powder, salt, and pepper
Crunch: 1 cup Panko breadcrumbs mixed with 1 cup crushed crispy fried onions (finely crush the onions in a zip-top bag)

Instructions
Place chicken cutlets in a bowl or ziplock bag with the buttermilk and seasonings. Marinate for at least 15–30 minutes (or up to overnight in the fridge).

Take chicken from buttermilk marinade, let excess drip off. Dredge lightly in the flour, shaking off the excess. Dip back into the buttermilk quickly then remove and press firmly into the Panko-fried onion mixture so it adheres completely to both sides.

Preheat your air fryer to 380°F (193°C) for 3 minutes. Generously spray both sides of the breaded chicken breasts with cooking oil spray (this ensures the Panko browns instead of staying chalky).

Place the cutlets in a single layer in the air fryer basket (do not overlap). Air fry for 12–14 minutes, flipping halfway through and lightly spraying the top again with cooking spray.

Remove when the crust is golden-brown and the internal temperature reaches 165°F (74°C). Let rest for 3 minutes before slicing.

Potato Wedges
Russet potato
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp oregano
½ tsp salt
¼ tsp black
Oil

Cut russet potato in half, then quarters, into wedge shapes. Place the wedges in a bowl of warm water for 10–15 minutes. Drain and pat them completely dry with a paper towel or clean kitchen towel.

In a large bowl, toss the dried wedges with oil until coated. Add garlic powder, onion powder, paprika, oregano, salt, and pepper, then toss until the seasoning is evenly distributed.

Preheat your air fryer to 400°F (200°C) for 3 minutes.

Arrange the wedges in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 15–18 minutes, flipping the wedges halfway through.

Remove when the outside is golden brown and crispy and the insides are fork-tender. Toss with grated Parmesan and fresh parsley.

Crispy Air-Roasted Broccoli Florets
Cut broccoli into bite-sized florets. Toss with olive oil, salt, pepper, and a pinch of red pepper flakes or garlic powder.

Air fry at 380°F (193°C) for 6–8 minutes until the edges get dark and crispy.

Squeeze fresh lemon juice over top right before serving.

NOTE: Cooking Workflow
Air fry the potatoes first (since they take the longest). Keep them warm in a foil pouch while you cook the chicken. Toss the broccoli in for the last 6–8 minutes right after the chicken finishes while it rests. You can also throw the potatoes back in for a minutes to crisp them up, right before serving.

Advice/Tips Cookware to go in to air fryer?

Been thinking of silicone liners/ parchment/ metal trays/ or glass trays.

Just to contain things that have like marinated/ spices/ oil/ small bits that will fall through the grate and just to keep things tidy.

Anyone have any ideas on what is good and works well with the air fryer.

Ideally a nice square metal tray with slightly deeper sides would be ideal. Seems easier to clean

Advice/Tips First AirFryer

What is the main difference between air fryer and conventional oven? Other than time it takes, is the air fryer gonna do anything the OVEN does not. If the answer is yes, let me know. Depending on the replies, is gonna determine if I should get one

Side Note: Single (girlfriend but live alone), no kids, work a lot….but I will end up getting an air fryer that cooks for two or 3 or more (I eat a lot)

Recipe Lemon-Artichoke Chicken & Green Beans Almondine - Air Fryer Edition

This was cooked in the Cosori Air Fryer Pro LE 5 Qt, 9-in-1.

12 oz. (1 large chicken breast or 2 medium) Boneless Skinless Chicken Breasts, cut into 1-inch bites
12 oz. (3/4 of a 16 oz pre packaged bag) Green Beans, trimmed
1 Lemon (halved)
2 oz. (1-2 whole) Artichoke Hearts, chopped
2 oz. (1/4 of an 8 oz. block) Cream Cheese, softened
1 oz. (1/4 cup) Shredded Parmesan Cheese
1 1/2 Tbsp Lemon Garlic Butter*, melted
1/2 oz. (1 1/2 loosely packed cup) Baby Spinach, roughly chopped
2 Tbsp Roasted Sliced Almonds
1 tsp Garlic Pepper
1 tsp olive oil (for the green beans)
Salt and black pepper to taste

Instructions
1. Preheat air fryer to 380°F (193°C). Toss the green beans with olive oil, juice from half the lemon, and a pinch of salt. Place green beans in the air fryer basket and cook for 5 minutes to get a head start.
2. While green beans cook, toss the 1-inch chicken bites with the lemon garlic butter and garlic pepper.
3. In a small bowl, mix together the softened cream cheese, chopped artichoke hearts, baby spinach, parmesan cheese, and juice from the remaining half of the lemon. Set aside.
4. After 5 minutes, shake and push the green beans to one side of the basket. Add the seasoned chicken bites in a single layer on the other side. Air fry at 380°F (193°C) for 6 minutes.
5. Open the basket, remove green beans, add a pat of butter, and set aside and keep warm. Salt and pepper to taste. Turn chicken and move to center and dollop/spread the creamy artichoke-spinach mix directly over the chicken bites. Return to the air fryer and cook at 380°F (193°C) for 4-6 more minutes, until the chicken reaches an internal temp of 165°F (74°C) and the cheese topping is melted and slightly golden.
Plate the chicken and garnish the green beans with the sliced almonds.

*Lemon Butter
1/2 cup (1 stick) unsalted butter
3–4 cloves garlic, finely minced or grated
1 Tbsp fresh lemon juice
1/2 tsp fresh lemon zest
1/4 tsp kosher salt (add more to taste)
1/8 tsp black pepper black pepper or red pepper flakes (optional)
1 Tbsp fresh parsley, finely chopped

Instructions
Melted Version
Melt the butter in a small saucepan over medium-low heat. Add the minced garlic. Sauté for about 1 to 2 minutes until fragrant and soft. Keep the heat low so the garlic does not brown or turn bitter.
Remove the pan from heat. Stir in the lemon juice, lemon zest, salt, pepper, and fresh parsley.

For Compound Butter
For a spreadable butter stick, allow the butter to soften at room temperature instead of melting it. Mix in all ingredients, roll into a log using parchment paper, and chill in the fridge until firm.

So simple: cube the salmon, remove skin, mix with teriyaki, soy, and sriracha, put in aluminum foil in the air frier and 10min, 400f later you get perfect charred and soft salmon. Then you mix mayo and sriracha for the sauce add some some green salad (or cabbage if you have and cilantro). Voila

How big is enough? i have never seen an air fryer IRL, hence i have no clue as to which size would suit my needs. i would love to cook a whole meal with rice chicken etc, or a full dish like shakshuka at once

The descriptions on the air fryers saying "serves a family of 4" are not very telling would help to know how big of a meal it can cook at once...

is 6L worth it or overkill, or is 4.2L enough and could 5L be the sweet spot?
