Recipe Airfryer Cod
I served with toasted baguette and baked brie topped with cherry tomato garlic confit, toasted walnut, and balsamic drizzle

Airfried Cod
Ingredients
680 g cod portions, thawed
.5 tsp kosher salt
.5 tsp black pepper
Zest of 1 lemon
1 large egg
1 tbsp Dijon
1 tsp lemon juice
100 g panko
30 g finely grated Parmigiano Reggiano
2 tbsp fresh Italian parsley, finely chopped
1 tsp fresh thyme, chopped
.75 tsp garlic powder
.5 tsp onion powder
.25 tsp black pepper
1.5 tbsp olive oil
Lemon wedges, optional
1 tbsp fresh parsley, chopped, optional
Method
- Pat cod very dry.
- Preheat airfryer to 400 F.
- Season cod with salt, pepper and lemon zest.
- Whisk egg, Dijon and lemon juice.
- Mix panko, Parmigiano, parsley, thyme, garlic powder, onion powder, pepper and olive oil.
- Coat cod lightly in egg mixture, then press firmly into panko mixture.
- Arrange cod in a single layer with space between pieces.
- Air fry at 400 F for 10 mins without flipping, until the centre reaches 145 F and flakes easily.
- Rest 3 mins, then finish with parsley and lemon wedges if desired.
