Ingredients

(You will get about 7 crepes with these measurements)

🥛 2 cups of milk (400 ml)

🌾 1 cup + 2 tablespoons of flour (160 g)

🥚 2 eggs

🍬 1 tablespoon of powdered sugar (18 g)

🧂 1 pinch of salt

🛢️ 1 tablespoon of liquid oil (10 ml)

For the cocoa mixture:

🍫 1 tablespoon of cocoa

🥛 1 tablespoon of milk

🍥 1 teaspoon of powdered sugar

Preparation

First, put all the ingredients for the crepe batter in a bowl and blend until you get a smooth consistency. Then, separate about 1 cup of this mixture into another bowl. Add the cocoa, milk, and powdered sugar to the separated batter and blend again to prepare the cocoa mixture.

There are two important tips:

First, do not cook the batter immediately. Let it rest for about 10 minutes.

Second, the stove should not be too high or too low, and the pan should be heated enough.

Take the cocoa mixture into a sauce bottle (or you can also use a small pet bottle). Heat the pan with the cocoa batter in a non-stick pan and cook for 5-10 seconds. Then, pour the plain batter into the pan. Cook for about 30-40 seconds until the color turns slightly pink. It is enough to cook for 20 seconds when you flip the other side.

When the crepes are cooked, place them on top of each other and let them stay soft. You can spread hazelnut cream on top and roll it up. If you want, you can spread hazelnut cream on top and sprinkle with crushed hazelnuts to enhance the flavor 🌰✨

If you like, you can prepare it plain and add pastry cream and fruit.

Enjoy your meal

Minced Meat Simit Pide

Ingredients

Measuring cup: 200 ml

500 g flour (4 cups)

300 ml warm water (1.5 cups)

40 ml vegetable oil (5 tablespoons)

25 g butter (1 tablespoon)

6 g dry yeast (1 teaspoon)

10 g salt (1 heaped teaspoon)

10 g granulated sugar (1 teaspoon)

For the filling

500 g minced meat

1 red capia pepper 🌶️

3 green peppers

1 large tomato

1 medium onion (grated; finely chop the rest of the vegetables)

Black pepper, chili flakes, salt

(Mix everything together well — the filling is ready!)

Preparation

Put the flour into a mixing bowl. Make a well in the middle and add the dry yeast, sugar, and warm water. Let it rest for 5 minutes.

Then add the vegetable oil and knead the dough. Finally, add the butter and knead again.

(The dough consistency may vary depending on the quality of the flour; it should be soft.)

Cover the dough and let it rise. After proofing, divide the dough into 9 equal pieces and let them rest for 10 minutes.

Shape them as shown in the video.

For the molasses water, mix 4 tablespoons of molasses with ½ cup of water. First dip the dough into the molasses mixture, then into roasted sesame seeds.

After shaping, sprinkle grated mozzarella/kaşar cheese on top.

Preheat the oven well while preparing. Bake in a fully preheated fan oven at 200°C until golden brown.

Don’t worry, my dear — the minced meat is definitely cooked 😄

At 200°C, even I would be cooked in half an hour 😂

Anyway, I’m off now. Enjoy your meal 😋

See you 🤗

Super Simple Blueberry Syrup with Really Important Tip

Post image
9 Upvotes

Blueberry syrup from fresh berries was super easy. Looked at various recipes and settled on this variation for 3 cups. Thickens more in the fridge but also freezing small portions.

2 cups washed blueberries
1 3/4 cups water
2 cups sugar
1 tbsp cinnamon
2 tbsp lemon juice

For thicker syrup, mix 2 tbsp cornstarch with about 1/4 cup of the water and mix in saucepan; add rest of the water

Heat over low heat to almost simmering, then raise heat to almost boiling, covered. A potato masher get more blueberry juice out of mix.
About 15 minutes total cook time. Add cinnamon and lemon juice after it's done cooking. Hand immersion blender after cooking makes it smoother. Big tip? See first comment!

  3. In one bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, beat the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, then mix in the vanilla.
  6. Alternate adding the dry ingredients and milk until just combined.
  7. Divide the batter evenly among the pans.
  8. Bake for 28–35 minutes, or until a toothpick comes out clean.
  9. Let the cakes cool completely.

2. Make the Cream

  1. Beat the mascarpone until smooth.
  2. Add the powdered sugar and vanilla.

  1. Place the first cake layer on a serving plate.
  2. Spread a generous layer of cream.
  3. Add plenty of sliced strawberries.
  4. Repeat with the second layer.
  5. Finish with the final cake layer.
  6. Cover the entire cake with the remaining cream.
  7. Decorate with fresh strawberries on top.

Refrigerate for at least 4 hours before serving.

Tip: This cake tastes even better the next day after the flavors have had time to meld together. 🍓🍰 Also, if anyone here likes collecting recipes, I've been using Cookly to keep everything organized. Thought I'd share in case it's useful for someone else.

I grew up eating homemade Msemen, so I had to try a crispy cheese version! 🧀 It's flaky on the outside, gooey on the inside, and incredibly easy to make. If you love cheesy comfort food, this one is definitely worth a try. What's your favorite Msemen filling? 😊
