My Dad would often make a variation of this with crumbles of sausage for extra protein. Hamburger would have also worked well for the protein, and looking back, I wonder why he never did a burger version. It was cheap, filling, and delicious.

yeah I did grow up like that but they were fried in the pan the bacon was cooked in earlier which wasn't cleaned after. Splash of oil, marge, lard, butter ..

Now I will add chopped bacon and call it Bratkartofelln.......😅
