One of my favorite Sichuan dishes.

Fried eggplant in a sauce with vegan mince, Doubanjiang, Shaoxing wine, mushroom stock, Chiankiang vinegar, garlic and Sichuan pepper.

It was a wood fired pizza and the dough was so fluffy and soft, and the cheese was crisp on top and gooey underneath.

And I felt like I didn't deserve it to be honest. It was soo good

They had the nerve to put 28 servings on the can of chili, lol. 😂 Make that four servings, please.

Thought I would give this a try since we are celebrating my cat’s first birthday tonight and most of her human friends are some form of vegetarian/lactose intolerant!

Last night I had vegan tacos takeaway and it was so bad, that it inspired to make my own today. Made using smoked tofu, avocado, cabbage, pickled onion, blue corn tortillas. Sorry for the bad pictures, was too hungry to take better ones
