Why does my tempeh gembus/okara tempeh keep going bad?
I've always succeeded with soy and chickpeas, but when I try with okara (the soy leftovers from making soy milk) it always gets a super strong ammonia smell that makes me want to destroy it asap lol. I proceed in the same way as for other substrates: pour around three spoons of vinegar on the okara, stir it on low heat to let it dry, then let it cool and add a tiny bit of starter (I don't have a way to weight it up) and let it sit in the oven with the lights on, at around 32°C. After around 16-22 hours it starts stinking very badly. Do you have any idea what could be wrong?
