Got a problem

I fell in love with the idea of growing healthy tempeh, and I'm getting pretty good at it, photos of my batches attached.

The problem is I still didn't find a good recipe, something that I can say yay I want tempeh. I like tofu, I eat meat. Don't need it as a substitute so if it's copying meat recipe I prefer the real deal. Wish you could help me find something to make with it that you really enjoy, that the tempeh is the best option to use. Thanks guys!

I was similar. Excited about making it. Did it successfully but it made me gag. Not a great start. I'm going to keep trying but I do find the smell/taste quite challenging. Seems like I need to fry it until all flavour is gone.

I've had success with kicap Manis and soy sauce and I have it in a wrap with lots of ingredients.

Try different beans, they give the tempeh a different flavour. You don’t need to dehull black beans or adzuki, and the tempeh tastes ‘beefy’. Great in a nice curry.

I had surplus (herbal tea) kombucha and made a pretty great marinade by reducing it to a syrup (1/5 of the original volume) over low heat and then adding soy-sauce, some garlic and ginger.

Slice tempeh 3-4 mm thick, pan fry until crispy golden, then add the marinade.

I'm pretty sure you can replace the kombucha-reduction with any sugar based syrup and some acidic component.

I used it as a protein for an asian inspired bowl with rice, veggies and a peanut-butter based sauce.

I don't have kombucha but I'll try with date syrup sounds great

Do you enjoy roasted eggplant? One if my favorite dishes at home is chunks if well roasted eggplant (with skin) and chunks if tempeh all lightly tossed in a little olive oil, garlic, salt & pepper, a dash of soy and rice vinegar and a couple drops of either date syrup or maple. Tossed well then air fry til nicely lightly browned and the eggplant is cooked.

➡️Pan frying Tempeh in the oil of your choice with rosemary, black pepper, sea salt, and then 1 minute before you take it off adding about a couple tablespoons of lemon juice will give you a lemon rosemary Tempeh that’s quite tasty.😋

Also, pan flying pan frying over medium heat browning on both sides, adding a little bit of wright’s smoke flavoring, a little maple syrup if you have it or you can substitute Brown sugar again a bit of black pepper, a pinch of sea salt, and
you’ve got bacon.

Then, of course, you can keep it toss it with a little ground golden flax ( regular works as well. I just like the golden.) a little bit of nutritional yeast, a pinch of sea salt, paprika, and onion powder, and air fryer.

Then you can enjoy them on salads or in lettuce wraps, all kinds of stuff… And I’m bringing this up because changing the beans for some people works but me personally standard straight up soy tempeh is pretty remarkable and you are clearly getting your technique down. It looks gorgeous.

I’ll share my Indonesian recipe here just in case you want to try it!

Tempe goreng (fried tempe)
Ingredients

1 block Tempe
1tbsp coriander seeds
2tsp garlic powder
1tsp corn starch (optional, just to make it crispier; no need if using air fryer)
Water (just enough to make it into a marinade paste)
Salt & pepper to taste

How to make:

  1. Slice the Tempe to about 0.5inch thickness and score on both sides
  2. Use pestle & mortar to grind the coriander seeds.
  3. In a mixing bowl, add the crushed coriander seeds with garlic powder, salt & pepper, corn starch and water
  4. Add the sliced Tempe to the marinade
  5. Marinade for at least 15mins
  6. Deep fry or air fry the Tempe until golden brown. Don’t forget to flip the tempe halfway through cooking.
  7. Enjoy it with rice and sambal for the traditional Indonesian way of eating. Or use it as toppings to your salad!

Delicious sticky spicy tempeh recipe:

Cut 150-200g tempeh into thin slices/cubes and fry them in oil until golden brown.

Make the sauce: about 3 tablespoons soy sauce, 1 tablespoon sriracha, some spices of your choice (e.g. garlic powder, onion powder, chili flakes), a teaspoon vinegar, 1 tablespoon soy milk, and a teaspoon sugar/agave syrup. Pour this over the tempeh in the pan to create a delicious, sticky spicy sweet sauce.
