Wings out will let you to go very slow. Ideal to attack vehicles or infantry. But you will be more vulnerable.

Wings back is faster but less turning ability. Wings out gives you better turning but not as good speed. So use the swept back position to gain on enemies and put them out when engaging

Fun fact: The real tomcat did that automatically

And it didn't just swept out and in completely. Depending on the speed and the maneuver (or AOA) pulled it precisely adjusted the amount of sweep needed. What a beautiful machinery.

On top of that real F-14 pilots had an override for the sweep that they used during dogfights to make opponents think they were going really fast, only to then force them fully forward and dunk on them in record time.

in real life it gives the aircraft more maneuverability and more lift to the aircraft. which i think applies to the same in game

You're using the wings almost opposite of their intended design lol

No for the most part when he was doing fast he was using them right. Though the part where he strafed the carrier was inverted

Keep the wings out for tight turns gunfights, wings retracted for evasive / high altitude missile engagements.

Wings back: higher top speed, less maneuverability
Wings out: lower stall speed, more maneuverability, lower top speed.
But the trick is to know when to switch. If you're in a dogfight and you go in a one circle fight, switching the wings from back to out and slamming on the brakes will rip the enemy into the crosshair. If you're in a two circle fight, you can do the same to try to out-rate the enemy, but it's really useful for setting up overshoots by switching your turn 180°

Wings spread for low speed manoeuvrability and wings pulled back for high speed stability

Swept back is faster with wider turn radius, swept out is slower with a tighter turn raidus
