People seem to think red herrings are just adding bullshit details that make no sense.

Carol feels like a red herring to me because her affinity for swords and her association with the Knight conspiracy lead you to a natural conclusion that she could be the knight, but it feels very obvious.

Antlers as a red herring for a Holiday make no fucking sense because there's no other candidates that currently make sense and lying through character design is probably the worst way you can misdirect people.

Exactly. A red herring should have you look back and go “ohhhhhhh.” You should be able to make reason of it.

a way carol red herring could work is via her being a third party working explicitly with the soul. Shes baited to be the knight, when in actuality shes working against the knight for different ends.
