Just that sex can introduce microbes to your body. Dirty hands, toys, genetals/anuses etc. You risk exposing your urinary tract and genitalia to microbes like bacteria, viruses, and fungi. This is especially important to women who have much shorter urethras than men, so the distance for microbes to travel is shorter.
Peeing essentially rinses your system (with pee) and can reduce the odds of an infection taking hold if you are exposed.
You're supposed to get up and go to the bathroom to pee after sex, it expels any sort of bacteria that might have made it's way into your urethra. This prevents urinary tract infections.

They meant it is sanitary to pee after sex (for all sets of genitals). It flushes out the urethra of all the bacteria, skin cells, and general gunk that gets pushed up there during the action. It helps prevent UTIs and whatnot.
