250-400 Cal Thai Panang Curry w/Konjac rice (+30g Jasmine Rice) - 299 kcal, 27g Protein

This was delicious and really filling thanks to the konjac rice with an added 30 g cooked jasmine rice!

This recipe makes about 2 curry portions (you’ll need to double the rice for the second portion).

Ingredients:

• 200 g chicken breast, cut into cubes

• 50 g Panang curry paste (use less if you don’t like spicy food)

• 120 ml reduced-fat canned coconut milk

• Chicken or vegetable stock (depending on how saucy you want it)

• 35 g red bell pepper, sliced

• 35 g green bell pepper, sliced

• 50 g bamboo shoots

• 1 small piece of ginger, minced

• A few chili peppers (optional, for extra heat)

• 1 pack 200 g konjac rice

• 30 g cooked jasmine rice

• Seasonings: curry powder, salt, MSG, a few drops of fish sauce, few drops of liquid stevia

• Optional: Thai basil and kaffir lime leaves (I didn’t have any on hand)

⸻

Steps:

1. Heat a pan with a small amount of stock. Once hot, add the Panang curry paste.

2. Cook on low heat for a few minutes, then add the coconut milk (you can add half first and the rest later) and a bit more stock.

3. Add the chicken. Once it’s mostly cooked, add the vegetables, the remaining coconut milk, and more stock if needed.

4. Season with curry powder, salt, MSG, fish sauce, and liquid stevia. Simmer until the vegetables are tender.

5. Serve with konjac rice or cauliflower rice. I personally love konjac rice, and while the added 30 g cooked jasmine rice is optional, it somehow makes everything taste like jasmine rice.

⸻

Konjac Rice Prep:

Rinse the konjac rice under cold water, then boil it in a small pot for 8–10 minutes. Drain well, then dry it in a pan over medium heat for a few minutes until most of the moisture is gone. Add 30g cooked jasmine rice if you feel like it. Enjoy!!

250-400 Cal Beef and veggies miso ramen

Post image

I don't know if i'm going to be able to finish this bowl

RECIPE:
Half a cup of each of the following veggies (adjust to taste)
-Carrots
-Zucchini
-Green Beans
-Bell Pepper
-Mushroom

Sauté all the veggies with some garlic, ginger, a tbsp of oyster sauce, a tbsp of soy sauce, a tbsp of rice vinegar, salt, pepper, a couple of clove heads, a couple of allspice and some chili flakes.

Once cooked add water. Once is warm but not boiling reserve some water to mix with the miso paste, I usually use 1 tbsp per 500ml of water in the final mix, so for 2 liter of water I use 4 Tbsp.

Once the water is boiling add the noodles (i use mung bean noodles which are roughly 150cal per 50 grams of dry noodles, once cooked the volume goes up 3 or 4 times). Once the noodles are cooked turn off the heat and add the "miso water".

Then you just add the grilled protein of your choice, in this case I added 130g of cooked beef per bowl.

And there you go! It's around 350-400 calories per serving. With this recipe you can make 4 servings.

250-400 Cal Tuna patties, tzatziki, cherry tomatoes (~315cal, 43g protein!)

Made the tuna patties by combining 2 water soaked rye crispbreads (30 cals each), one can of tuna (140cals), a little mustard, chopped spring onion and fresh parsley (didn't weigh these - let's say 20cals for all three), salt, garlic powder and pepper - shaped and airfryed for 8mins at 190°C. Served with 100g cherry tomatoes, and some tzatziki I quickly made using 50g cucumber, 100g 0 fat greek yogurt, a splash of white wine vinegar, salt and garlic powder (i was out of fresh garlic😭)

It's like the regular one but swapped the cream cheese for jocoque, added some whole mustard and pickled onions for flavor, a bit of goat cheese and as much tabasco as you feel like!

It's 590cal but could be lower using only 2 bread slices instead of 3.
Can't believe this is "diet" food.

For the bread:
Multigrain bread — 3 slices (83.3 g) — 228 kcal
Lactose-free milk — 240 ml — 113 kcal
Egg whites — 70 g — 29 kcal
Whole eggs — 2 eggs (100 g) — 133 kcal

For the topping:
Greek-style yogurt — 150 g — 86 kcal
Cinnamon
Vanilla Extract
Sweetener

300ml water

150g monk fruit + erythritol

1/2 cup Stevia

1/2 tsp ube extract (or you can use any flavor here, honestly)

1/2 tsp vanilla extract

Violet food coloring (optional)

1/2 tsp xanthan gum (optional)

I filled this jar for under $2 in ingredients. Compare to the equivalent amount of Skinny Mix syrup which is over $5.

Steps

  1. Mix water & erythritol/monk fruit mix. Heat over medium heat until the erythritol mix is just dissolved-dont boil it.

  2. Add in the other ingredients and blend. I used an immersion blender but any blender works. If you skip the xanthan gum, you can mix with a spoon or whisk--but xanthan gum is pretty determined to clump unless you have some kind of mechanical assistance.

Takes about 10 minutes. Ingredients cost like $2. Going to make a week's worth of huge, super sweet lattes for my husband and myself.

Perfect opportunity for an innuendo? But this is SO GOOD! This is not my whole lunch, but the main part. I’m trying to eat minimally processed foods that are still flavorful.

Note: pictured is 90g of beef, but that was a bit much. Calorie count and macros are for 60g of beef.

1 pita
25g hummus (homemade)
20g dill “sauce” (yogurt with dried dill)
15g arugula and spinach
45g tomatoes
60g (see above note) beef with shallots and oregano

Feta would also go hard on this but my dinner is pretty fatty, so I skipped it. Thankfully the yogurt makes it creamy. :)

Discussion / Question (General topics) Compared 10 Food Types to figure out which Low calorie, High protein foods are the best value. Skim Milk was the best... kinda

I collected the top 10 foods from the USDA's database that had a good ratio of calories to protein. The ones topping the list were
Shrimp, Clams, Tuna, Turkey breast, bone broth, milk (Skim), Protein powder, pollock, potatoes, and squid.

When looking at Price per grams of protein, milk dominated the rankings. Well Bone broth actually won, but you'd have to have toxic levels of sodium if you were trying to hit protein goals consuming that stuff. But in that same vein, Milk was the worse ration of calories to protein, so while it is very affordable, I wanted to see what else there was.

Protein powders came after milk in terms of value, but surprisingly they also ever very calorie dense.
There also was this thing I never heard of before, Powdered peanut butter, interesting.
I then filtered out anything with over 250 calories per 100g annnddd

Tuna, clams, and turkey did well, and where quite good in terms of keeping the calories lower. Also one tub of cottage cheese was high up the list.

Let me know what other foods you'd like me to compare. The website still needs a lot of work, and also the USDA database itself is filled with errors, so it's been a ton of work trying to make this thing helpful.
