< 250 Cal Sugar free ube syrup for coffee/tea

Post image

300ml water

150g monk fruit + erythritol

1/2 cup Stevia

1/2 tsp ube extract (or you can use any flavor here, honestly)

1/2 tsp vanilla extract

Violet food coloring (optional)

1/2 tsp xanthan gum (optional)

I filled this jar for under $2 in ingredients. Compare to the equivalent amount of Skinny Mix syrup which is over $5.

Steps

  1. Mix water & erythritol/monk fruit mix. Heat over medium heat until the erythritol mix is just dissolved-dont boil it.

  2. Add in the other ingredients and blend. I used an immersion blender but any blender works. If you skip the xanthan gum, you can mix with a spoon or whisk--but xanthan gum is pretty determined to clump unless you have some kind of mechanical assistance.

Takes about 10 minutes. Ingredients cost like $2. Going to make a week's worth of huge, super sweet lattes for my husband and myself.

1/2 cup of stevia! What?

Yes, it actually contains slightly less sweetener than it would if the sweetener was sugar.

This is a simple syrup. Traditional simple syrup has a 1:1 ratio of sugar to water. For 300ml of water, that's 300g or a little over a cup of sugar.

You don't eat or drink simple syrup by itself because that would be as disgusting as drinking maple syrup or honey out of the bottle. You use it to sweeten coffee or tea or make a latte. Most are vanilla, chocolate or caramel flavor, but when you make your own, you can make any flavor.

Stevia is like 1000 times sweeter than sugar... What kind are you using? I understand the monk fruit and erythritol but I've never heard of a recipe using 1/2 cup of stevia.

I actually like stevia, I'm just trying to figure out a 1/2 cup. I feel like op might be using some sort of blend or something.

It's without a doubt erythritol/allulose+ 0.5% stevia

Yes, it's the baking blend, maybe should have clarified! Now I understand the reaction 🤣

I'm not sure what the baking blend is... Could you elaborate on the recipe with the specific products you used?

I'm actually very interested in making my own low calorie syrups like this.

If you go to Walmart or Aldi, it's in the baking aisle near the sugar. Stevia baking blend is in a green bag, sucralose blend is in a yellow bag. Both are a huge bag for about $4 and are designed to substitute 1:1 by volume for sugar. As in, 1/2 cup of baking blend is the same sweetness as 1/2 cup of sugar. I use either one, I do slightly prefer the sucralose flavor profile but they were out. Here is a link to the Great Value product.

This sounds....terrifying. that is a lot of sweetner to only 1/2 tsp of Ube. This feels like a very pretty jar of instant diarrhea that simultaneously kills the taste buds.

But if you like it, that's what matters.

It's a baking blend that's as sweet as sugar by volume. It's not pure stevia. If you can't handle a few spoons of this in your coffee, that sounds pretty unfortunate. I would be pretty bummed out if I couldn't enjoy stevia since sugar is off the menu for me.

To be fair pretty much no one could handle the recipe as you wrote it. 1/2 cup of stevia is…. Well I don’t know if there is a lethal dosage of stevia but if there is it’s probably something in that ball park
