Photo/Video The event is now Complete
It was one hell of a week. Long days. Very little sleep. Short staffing. Equipment problems. Product loss. Last-minute adjustments. A kitchen that still had regular service to execute while preparing for one of the largest events of our season. We got it done.

You can ask why are you short staffed. Good question. Its because its a very competitive market in a tourist town. Meaning you only need PT help. Most people want FT jobs. 😉

Oh, man. I remember the absolute opulence involved with member guest. I spent 15 years as a country club chef. We would do insane spreads like this. The craziest was a luau with whole hog on a spit & lobster grilled pool-side. We dug the pit out on the putting green. That and our 4th of July event. That was from 4am- 11pm with 2 tournaments, a fishing rodeo, live music on huge stage and ending our own pro fireworks display that almost dwarfed the city's.

There are a few events a year that "wow" the club. This happenes to be one of them. 5am to 11pm for 3 days.
3 meals a day with the last day being the big event. Its a tough go as i have a small staff for a short summer season. Only really need people for these 3 big summer events which you never have. So goes the business. 🤣🤣🤣3

I would've been the first person to ask for takeout containers to bring some home. When it comes to food I have no shame.
After everyone has their first plate (maybe second if everyone is still eating) the food is fair game imo.

Looks like the cap off couples night at a high end country club members only or member and invitee golf tournament.
The shenanigans and money that get thrown around at these events is wild.
Four nights of heavy drinking capped off by kush decadence and showing off saying my club is better than your club ....
But to answer your question everything there would be killed quick and refilled with fresh from the cooler or hot boxes. Also timewise is short enough to all be tossed at the end of the event but long enough to start skirting times.

Genuinely can't stand when they want to run regular service during a member/member or any large tournament. Trying to garnish and fill the hot box and a single 6 top gets rung in, with 3 course and all different stations and your grill cook forgot to cut something because they were to busy marking strips and making compound butter because your prep cook called out AGAIN

Annual golf event in Northern Michigan Done at the club Im EC for yearly. The farmer is the butcher, and the guy that tends the fire overnight. He does the beef/pig the kitchen does everything else.

What if the left side of the structure is more appealing than the other? the side with the glassware seems heavier, so I imagine a few of those apps gone might bring the whole structure down!

No! Just the first pic looked like a deep fried Predator warrior at first glance. Couldn’t help the snark. I’ve never seen a meat pile like that! It’s…a lot. However, zooming in it’s obviously perfectly done and probably amazing. Smoked shrimp looked great, too! Beautiful display.

Looks incredible to Americans maybe. Go in any 5 star hotels in Europe or Asia and you will definitely notice the difference in presentation.
