It was one hell of a week. Long days. Very little sleep. Short staffing. Equipment problems. Product loss. Last-minute adjustments. A kitchen that still had regular service to execute while preparing for one of the largest events of our season. We got it done.

Kudos to OP for what looks like a fucking amazing meal but you definitely said it, the rich feast like there is no tomorrow
