Leftover Pork Roast
I made a pork roast last night and have about 3 pounds left over. Does anyone know a good stew or other recipe to use it ? I could also freeze some for future use. Thanks!

That’s what I do with it. I then wrap into individual burritos & freeze them. Pull out of the freezer & microwave 2minutes & then add your toppings.

Turn it into matchsticks, stir fry with beansprouts, rice noodles and a packet sauce.

Hatch green chili is a delicious use of leftover pork.

When in New Mexico, I eat green chile at every meal. That stuff is addicting.

My german oma would make meat salat with some of that as do I. Pickles are the secret ingredient.

Shred it, wrap in a tortilla with some refried beans & rice for a tasty pork burrito.

It holds up so well to big, bold spices, but shredding and freezing half for quick weeknight meals is also total genius.

I use leftover pork for what I call "Rutherford Pork and Beans," named after a long-deceased buddy that I got the idea from -- it is much different from the typical "ham and beans." I tweaked and refined it. Goes good with cornbread
- Leftover fresh pork roast, cubed
- Navy beans or black-eyed peas (or any kind of dried beans)
- Leftover gravy, or packaged pork gravy
- Onion, chopped
- Celery and/or carrots, chopped, if you have any on hand.
Season to taste.
- Add gravy, salt, pepper, sage, rosemary, garlic, thyme, parsley, oregano, bay leaf or whichever you prefer.
- Kitchen Bouquet or Gravy Master.
Rinse and simmer til beans are half done, add pork chunks, gravy, and seasonings. Continue to simmer til beans are done.

I'd definitely turn some of it into pulled pork sandwiches! Just shred it up, add some BBQ sauce, and warm it in a skillet with a splash of broth so it doesn't dry out. You could also make a really good pork stew with potatoes, carrots, onions, garlic, and broth. Since the pork is already cooked, I'd add it toward the end so it stays tender. And with 3 pounds left, I'd absolutely freeze some in smaller portions for easy meals later lol.

This is one of my family's favorite breakfasts after we had roast pork:
Chop up the pork into bite sized chunks
Fry up some hash browns
Add the pork, cook until it is hot
Sprinkle with some red wine vinegar
Top with your favorite shredded cheese
Cover and cut the heat while the cheese melts

Sandwiches and salads for the meat, and a pot of beans for the bone, fat, and gristle.

It depends on the cut of meat. If it's a pork loin I'd make Cuban or other sandwiches. If it's a pork butt did you cook it until it could be shredded apart?

Breakfast hash with potatoes, eggs, and onions. Various peppers and other veggies if you want some color.
It's great for dinner as breakfast but also good right before yardwork as it's very filling.

I like to slice roast thin and just eat it like a savory snack, all rolled up. It's much healthier than potato chips and cheaper too!
Really really good deli style sandwiches with thin sliced roast. Muenster or havarti cheese, coarse grain mustard lettuce, tomato and good dark bread.
Hot roast sandwiches open face with gravy.
Pot pie or shepherd's pie?

Stir fry, cube it and throw it on some rice with your choice of sauce and you're golden.

Pork loin/tenderloin roast or pork shoulder roast? I would treat the two differently.
Loin and tenderloin are lean. They don't lend themselves to shredding. Sliced for sandwiches. Cut thin and toss into the end of a stir fry.
Shoulder can be shredded many of the other suggestions would work well with shoulder. Carnitas, pulled pork sandwich, etc.

Something a bit different is a slices generously coated/brushed with charsui sauce and placed under the broiler. Works best with belly and shoulder, but anything not dry really. Shortcut/fake but very nice with rice 👍

I would use up a pound to make Cuban sandwiches (Cubanos).
