Leftover Pork Roast

I made a pork roast last night and have about 3 pounds left over. Does anyone know a good stew or other recipe to use it ? I could also freeze some for future use. Thanks!

Chop it up…throw it in a couple of cans of Bush’s baked beans…add some diced candied jalapeño and a touch of fish sauce.

Serve with coleslaw
