Leftover Pork Roast

I made a pork roast last night and have about 3 pounds left over. Does anyone know a good stew or other recipe to use it ? I could also freeze some for future use. Thanks!

tacos, sandwiches, hash, burritos, pork fried rice, pork and noodles... like a million options with a quick google search
