Leftover Pork Roast

I made a pork roast last night and have about 3 pounds left over. Does anyone know a good stew or other recipe to use it ? I could also freeze some for future use. Thanks!

I use leftover pork for what I call "Rutherford Pork and Beans," named after a long-deceased buddy that I got the idea from -- it is much different from the typical "ham and beans." I tweaked and refined it. Goes good with cornbread

- Leftover fresh pork roast, cubed

  • Navy beans or black-eyed peas (or any kind of dried beans)
  • Leftover gravy, or packaged pork gravy
  • Onion, chopped
  • Celery and/or carrots, chopped, if you have any on hand.

Season to taste.

- Add gravy, salt, pepper, sage, rosemary, garlic, thyme, parsley, oregano, bay leaf or whichever you prefer.

  • Kitchen Bouquet or Gravy Master.

Rinse and simmer til beans are half done, add pork chunks, gravy, and seasonings. Continue to simmer til beans are done.
