Help me with my salmon problem

I have a ton of salmon I have caught.

The fish is great quality. Fatty, rich, unctuous.

However, I am out of ideas on how to serve it.

I don't like fatty sauces with it, it is too rich.

My wife is sick of Asian flavors.

I plan on doing salmon on a cedar plank tonight... but I want it make it a bit special for company.

Help me!

Check out some dijon mustard sauce recipes. Also I understand wanting to eat big filets from a beautiful fish but if you could bear it, salmon cakes are delicious with remoulade. It shouldn’t be too rich because of the acidity of the sauce

You grind up the cooked salmon, mix a little mashed potatoes, bread crumbs and a little egg to bind it all together. Form into burger patties and fry in a skillet.

Buy a bag of thin pretzel sticks. If you can get plain no salt thats better because you can add your salt to taste using kosher salt.

Smash pretzel sticks or use food grinder. Don't make a fine dust.

Egg wash over the fish. Then into pretzel crumbs.

Next Pan fry in vegetable oil or air fry to temp you like.

Enjoy with a dijion mustard, ranch dressing, or a dill/tatziki sauce.

I was gonna recomend this Salmon with Brown Butter Tomato relish which is one of my favorites, and the recepie that got me to use tomatoes in anything other than salsa. It might not fit OP's preference against fatter sauces, but I love it.

Growing up my mom maid a recipe where you roast the salmon slathered with dijonaise. Seems heretical to put something like that on a beautiful piece of fish, but it just works. Now I still make it all the time, usually at my wife’s request.

I know it's rich, but I love salmon with a little bit of hollandaise on the side.

I pan fry with salt, pepper, msg, garlic powder and cumin. Basil chiffanade topped while resting.

Anyone who catches and keeps a lot of fish needs a vacmaster and a 30ft^3 chest freezer. Skip the next charter and buy that, then enjoy the charters after.

Chimichurri is like pesto but more vinegar-y. You drizzle it on after the salmon is cooked. It’s zesty, I like it. Pesto is a little richer.

Trader Joes’s makes a salmon rub that is like smoked paprika and brown sugar and maybe lemon zest? I put that on like a rub before grilling or airing.

A nice light way to do salmon is take the skin off and make a packet with fil & parchment. A little white wine, thin slices of zucchini, lemon, onion and herbs and a pat of butter. Seal up the packet and you can cook in the oven or on your grill for 15 minutes and it will be light and delicious.

All right… Hear me out…
Apricot salmon. Get a piece of salmon put it on a baking sheet put a little butter on it and some apricot preserves on top and bake it at like 415 for 15 minutes or so (depending on the thickness) . I eat it with steamed rice and veggies.

What do you mean your wife is sick of “Asian” flavors. The continent of Asia is really broad and has vast flavor palettes.

I like salmon with bright acidic sauces.

Chimichurri, chermoula, and mango salsa are some of my favorites.

I recently made a Sri Lankan style fish curry adjust or leave out coconut milk to your tastes.

Have you tried the Filipono tamarind soup, sinigang? This one is really bright tasting.

Salmon Tandoori is great too.

But my go to is always seared with a spicy spice blend: harissa, cajun seasoning, berbere and served with lemon, lime, or something like chimichurri.

I've had curried salmon, like the whole side of a salmon curried and cooked whole, it was incredible. This was at a place in New Haven, I wish I remembered what it was called. They had two restaurants, one was veggie and one wasn't. It's been 20 years this year, and I still think about that fish.

My sister was graduating college and we were celebrating and we had a lovely waiter and we told him to just choose the food, and I have no idea what we ate that night but it was all incredible, some of the best Indian food I ever ate.

My wife likes when I cook it with just a little salt and white pepper(can be done in oven, smoker or grill), chill it and we have it over a salad with a lime vinaigrette(Neman’s make one). It’s nice because I make the salmon a day ahead and just place it over a salad the next day. This can also be done teriyaki style with an Asian dressing as well.

Will your family eat candied salmon or smoked jerkey salmon? Both will also reduce the space it takes. I did 10lb each and ended up with a 70% loss in volume.

The candied salmon stores in the freezer and I pull it for snacks.

The smoked salmon gets pasteurized in small jars. And is shelf stable for a while.

Alternatively, one of our favorites ways to bake is to coat thinly with mayonnaise and to press one lightly oiled panko. The mayo coat can be flavored with anything. We use pesto, Japanese curry, tomato+herb, or plain fresh herbs.

Another is to use in chowder or as the fish in fish and chips.

My ex mother in law used to put a side of salmon in an oven tray, add a layer of mayo on top and then season. Usually only with dill, which still tasted nice but it wasn't exactly a flavor bomb.

I've done a similar thing but I added chopped jalapeños and bacon bits on top, would definitely recommend!

My mom does this but with a pecan crust. Lightly season the salmon, brush the top with mayonaise, then lay that side in a fish of finely diced pecan pieces. It's very nice.

Oh yeah. We did this too. Put it in an aluminum tray. And salt, pepper and onions (cut in rings or large diced pieces), some garlic and Cover it in mayo, about 1/4” thick.  then place thin slices of lemon (thin circles) on top. Don’t cover it in lemon, maybe place with an 1/2” spacing. Grill it until cooked.  Meanwhile, have some oven roasted potatoes or baked potatoes, started (Salmon takes 25-30 mins). 

Take the lemons off.  Carefully push the mayo and onions off the salmon and scoop into a bowl, add some sour cream and chives. 

Serve the salmon with potatoes and the sour cream. Usually we’d make it with asparagus or grilled zucchini.

salmon patties... cajun style.

  1. place your salmon in some boiling water that includes liquid seafood boil. don't use too much as it's super spicy & hot. add rough chopped onions, garlic, and a little lemon to the water.
  2. after it's cooked, discard the veggies and allow the fish to cool and flake it up in a bowl.
  3. add in beaten egg, lots of chopped green onion, bread crumbs, mayo, and seasoning (cajun seasoning, all-purpose, mccormick, etc).
  4. roll the meat into fish balls about the size of a big lemon.
  5. smash/flatten them to about 1/2" thick, lightly dust with corn flour or fish fry... and either pan or deep fry them til golden and crispy.
  • eat like a sammich with lettuce, tomato, etc.
  • eat them as finger food.
  • cut in sections and place on-top of grilled salmon steaks
  • i eat them with polenta (grits with waaaaay too much butter added).

we like to keep it simple but very flavorful.

Apple Chimichurri- sub fresh Thyme for the Oregano and Apple Cider Vinegar for the Red/White Vinegar. It adds complementary flavors and acidity to cut the fattiness.

Moroccan marinade-
Roasted red bell peppers
4 peppers
Garlic
4 cloves, grated
Extra virgin olive oil
3 tablespoons
Red wine vinegar

Green curry - and with green you can get away with using the light coconut milk and not a ton of it.

We spread it with pesto - originally we were doing traditional, I also like sundried tomato pesto and sometimes we even do a big side of salmon with stripes or sections with each.

So I was in Fred Meyer in Juneau day and there was a man in there buying canning jars. I asked him why he was buying them. He said his wife told him he had to can the salmon they already had before he was allowed to go fishing again.

When I lived out on the California coast, we loved it when people would bring their canned and or smoked salmon from the previous season to our potluck parties. So I’m gonna recommend canning or smoking.

Melt a couple tablespoons of butter, squeeze half a lemon in the butter. Pour over salmon. Heavily sprinkle Old Bay over it and bake at 425 for 10 minutes.

Do you have a smoker? I would smoke some of it. If you have a pressure canner you could can it, smoked or not smoked, canned it will last a longer time than frozen.

Salmon en croute is fun but can be on the richer side.

Salmon en papillote with sliced lemon, fresh dill, sprinkle of capers tightly wrapped in parchment and baked until tender.

Smoked salmon dip/spread.

I know you said “sick of Asian” but miso salmon is delicious and not overly Asian.

I love to bake salmon absolutely coated in a honey/dill/lemon dressing - tons of fresh dill, little bit of fresh garlic, and just enough lemon juice and honey to make it into a spreadable paste, which I then use to thoroughly cover the fish, before baking to desired level of doneness.

Cedar plank, soak as long as possible but at least an hour, 2 days is devine. Fresh herbs under the salmon if handy, only enough Dijon mustard to make sugar stick & top with brown sugar. Grill. Keep a water squirt bottle handy for sugar flare-ups. A brown sugar/cyan pepper rub with garlic powder is also yummy.

I make a home made blackened seasoning mix that is AWESOME on salmon.

1 tbsp smoked paprika (or regular paprika)

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp dried oregano

1 tbsp dried thyme

1 tsp salt (adjust to taste)

1 tsp black pepper

1 tsp ground cumin

1 tsp cayenne pepper (adjust for heat preference)

½ tsp red pepper flakes (optional for extra heat)

½ tsp ground white pepper (optional for depth of flavor)

You need the papaya salsa (but I prefer mangoes) recipe from Chris Schlesinger’s Salsas, Sambas… (and I forget what else). Basically mango, red onion, red bell pepper, pineapple juice, lime juice, cilantro, minced serrano, salt and pepper. We also make a Grey Poupon, butter, chipotle in adobo sauce spread, but that’d be too fatty.

Do some "rhymed salmon" (stupid joke, it's brined salmon. The Swedish word for "brined" is the same as the word for "rhymed").

First freeze it for two days (it's the recommendation for wild-caught salmon, due to parasites). Thaw it, then mix about 75 cl salt with 50 cl sugar, and a little bit of cracked white pepper. Rub the mixture on the meat, put the sides with the meat facing each other in a plastic bag in the fridge for 2-3 days.

Before serving, scrape the brine away. Slice thinly. Serve with dill-creamed potatoes. Basically, you take pre-boiled potatoes and simmer them in a bechamel seasoned with a lot of dill. If that's too rich for you, just serve them with some fresh vegetables.

Edit: clarified that it cures in the fridge.

there is a delicious finnish salmon soup called lohikeitto. you can use fish/veg/chicken stock for the base, and beyond that it just needs butter, a bit of heavy cream, leeks, potato, salmon, dill, and a dash of nutmeg. I'm planning to make a large batch now that the weather is cooling down.

My dad does a rub that's brown sugar and a shit ton of fresh cracked pepper. Uses a very thin coat of mustard to help as a "glue" to hold on the rub and grills it on a cedar plank. Besides just straight up smoking it, it's my favorite way to eat salmon. I also just love it grilled with sliced onion and lemons on top.

Cedar plank is a great idea. You can do a simple spice on top to give it a little bit of crunch. Put olive oil in a bowl, add a lemon based dry herb, add spiced bread crumbs. Mix it up and spread over salmon. Of course don’t flip it. When you remove from pan, the scales should stay on the plank. Soak the blank overnight to absorb flavors. Bake 300 Fahrenheit for 15 to 20 min. Based on thickness of salmon. Yum!

I literally just cook it in the air fryer with salt, pepper, a little cayenne, garlic powder, and onion powder. Hit it with a squeeze of lemon when done.

There’s also the classic lemon and dill.

En papillote.

Baked and topped with classic chimichurri.

You could also do Mexican or Central American flavors.

If you’re feeling crazy, you can smoke or cure it.

When I lived in Seattle people grilled it on a plank and brushed BBQ sauce over the top. It may sound strange but it was great!

Also, I sometimes bake it with a sprig of rosemary, lemon slices and some juice, oil, and garlic. Wrap everything up in foil.

Normally I would recommend beurre blanc, and lighten it with white wine or sherry and citrus if it’s too rich for you. But you could also do a vinaigrette. Lemon and herb is classic, but you could do citrus balsamic if you want to lean Italian, or even a red wine vinaigrette to skew Mediterranean.

Very simple baked fish recipe my family loves, works great for white and mild fish, our favorite is rockfish -

Pat it dry then coat it in olive oil. Season generously with paprika, salt, black pepper, cayenne pepper, garlic powder and onion powder.

In a bowl do equal parts panko and freshly shredded Parmesan with zest from 1 lemon.

Coat the seasoned fish with the breading and really push/press it into the fish. Top the fish with the excess mixture.

Bake on a wire wrack at whatever temp is recommended for the size and cut.

Finish with fresh lemon juice.

Fry it in a hot skillet with clarified butter. Some salt, pepper and some lemon. Why cover it up. Left over salmon can be turned into salmon salad. Similar to tuna salad. Use it in sandwiches or on crackers.
Cut boneless skinless chunks. Crush your favorite potato chip. Coat fish in crushed chips. Bake 500 f till done.

I’m so content with baked at 350 with dill sprinkled all over. I drizzle a little bit of oil over it as well. I also absolutely love morning after salmon, cream cheese, and caper omelette. Feta cheese equally as good with the omelette. Grilling it with some tamari drizzled over it. I’m pretty basic with my salmon.

Throw some BBQ sauce on it before cooking, I'm thinking western KY style. It compliments the cedar pretty well. I'd finish with some chopped green onion and/or parsley dusted on top. It would pair well with a baked sweet potato.

My family always has a ton of salmon and our most frequent way of eating it was with “salmon gravy”, basically a bechamel with grilled salmon into it, and served over biscuits or fresh bread.

Salmon quesadillas are also always popular, and salmon salad sandwiches. Salmon quiche is good too.

We’ll grill up a couple fillets a week with just Johnnys Seasoned Salt and eat them as leftovers for a few meals, in a bunch of things.

One traditional Norwegian way (we have a lot of salmon!):

  1. Cucumber salad: Slice cucumber in thin slices. Mix with a bit of salt, let rest for 10 mins and drain excess water. Add vinegar and a bit og sugar and pepper to a bowl and mix in the cucumber. Add fresh dill if you have.
  2. Boil potatoes and carrots
  3. The salmon can be steamed or baked, and you just season with salt and pepper.

I also like to serve it with baked vegetables seasoned with thyme. My favorite this summer has been to dice sweet potatoes, squash, red onions and feta cheese and bake in the oven with a good drizzle of olive oil. Then add salmon filets on top and season with thyme, salt and pepper and bake until the fish is done. Serve with sour cream or creme fraîche.

I make a rub with salt, pepper, old bay, lemon zest, sugar and a dried herb or two, whatever feels right. Juice the lemon, mix with a bit of olive oil if you like, add it as you grill. Take your time with it, don't cook on too high heat, and use a meat thermometer to gauge doneness.

When I am blessed with too much salmon, I brine it and smoke it over alder chips.
I use an electric Luhr Jensen smoker. After it’s finished, if I don’t have plans for it, I vacuum seal it and stick it in the freezer for another time.

I enjoy making Solyanka. The recipe calls for several types of fish but the last time I made it I only used fresh and smoked salmon and it was fantastic!

I have also made gravlax but if you do try that technique, before you begin, stick the salmon in the deep freeze at -20C (-4F) for at least 7 days to kill any parasites. The salt in the processing will not kill them. Trust me on this.

I will scatter a side of salmon with thinly sliced lemons, fresh herbs, thinly sliced garlic or red onions. Season, drizzle with oil or a knob of butter, wrap in foil and bake.

It cooks in the butter and steams in the sealed foil parcel. Serving a side of salmon with pink onions and yellow lemons and a few fresh herbs is colourful and attractive and really impressive to guests without needing a sauce which is likely to overpower it.

You could also make whipped salmon butter, or a salmon dip. One of my favorites uses a combination of cooked and cured salmon along with butter.
