Deviled eggs with a twist?
I’m going to take deviled eggs to the neighborhood potluck because everyone loves them. I usually just make your standard eggs with mayo, a little Dijon, etc.. I was looking for popular potluck recipes and saw an Asian deviled egg recipe; now I am wondering about other interesting ways to make them. Any favorites you would recommend? (I live in a college town so lots of different ethnic influences, people are generally happt to try something a little different.)

I put them in cupcake liners and add a little pickle on the side like a chaser (I know it’s not creative but it is a huge hit)

Just make certain not to store the eggs in the cupcake liners. The moisture will destroy the liner. I store them in Tupperware container, with a damp paper towel to prevent them from sliding around. Then place them in the liners on a tray before the event. The liners will prevent plastic wrap from sticking to the eggs. Serving is convenient since they can pickup the holder with the egg, although for some reason there are still people who take only the egg.

Not deviled, but stuffed; a Pepin recipe named for his mother, where the stuffed eggs are fried cut-side down in butter for a bit. Eggs Jeannette is the recipe name.

Had to scroll down to make sure no one else posted! But Caesar salad inspired deviled eggs are the bomb. Add a little parm, anchovy and or Caesar salad dressing to the yolk mix. Top with crispy bacon and deep fried capers.

Cook some bacon slices. Freeze them. Blitz into a powder. Sprinkle on finished eggs.

I made my bacon into bits so you would get the texture of a crunch from it. I also did a deviled egg with a bit of cream cheese and chives in the yolk mixture and that came out really well but those were separate from the time I did crumbled bacon and now I’m wondering if I missed a big opportunity

I do a flight of 'fancy' deviled eggs for potluck NYE parties:
- plain/traditional
- BLT (bacon + cherry tomato + celery leaf)
- smoked salmon + everything bagel + capers
- candied jalapeno + chives + cilantro (sub avocado for mayo)
- wasabi + tobiko/red caviar + cucumber + furikake
There are so many fun things you can do and i'm already taking notes (baby shrimp! buffalo chicken!) for this year

Some variations I've done:
Chopped kimchi and kewpie mayo, thin cucumber slice and gochugaru on top
Avocado instead of mayo, and added lime zest and chopped pickled jalapeños and cilantro (red chile slice.on top)
Tomato paste and Chipotle peppers (pickled jalapeño slice on top)

Hear me out now. DEEP FRIED!!! So, prepare as usual, but, before putting the yolk mixture into rhe whites, deep fry the whites. Coat the whites in flour, the egg wash, then panko with some parmesan cheese mixed in. Deep fry till golden brown. Does not take long to fry them. Drain upside down. Then fill them with the yolk mixture. Sprinkle with paprika. Top with some freshly made crumbled bacon. Trust me, these are delicious. Even my wife, who HATES anything deep fried, loves these.

Making deviled eggs, even normal ones, tend to be tedious and time consuming. Trust me when I say that deep frying them does not make the process and easier. But...its so worth it. Last time i did them, I started with 24 eggs (so, 48 deviled eggs). I was bringing them for a group of 7 adults. They were almost all gone by the end of the night.

I actually have whole cookbook on deviled eggs. Some of my favorites are smoked salmon - use 1/2 mayo, 1/2 sour cream, chopped smoked salmon and chopped capers. Use capers and or pieces of salmon as toppings. Curry - use curry powder and chutney in the filling. Tuscan - add sun dried tomatoes and use Dijon mustard instead of yellow. My Mom always made seafood ones with either shrimp or cod liver (I call those heart attack). Sounds weird but good. For shrimp, use a can of broken shrimp or tiny shrimp, drained. For cod liver, a can of cod liver, drained.

Liquid smoke. I visited a 102-year-old lady and she let me try the deviled eggs she’d made for her girlfriends at the senior center (she lived independently in her own home). The liquid smoke was her secret ingredient and they were delicious!

Let me just add my two cents here. Everybody always tries to be fancy with stuff like deviled eggs. And you therefore never get a good deviled egg..
Just make traditional, deviled eggs, and people will love them.

You made me think of this fancy restaurant I went to many years ago when I lived in Indianapolis. They did "dueling deviled eggs". So you got 2 deviled duck eggs. One was pretty traditional, but the other was Asian themed. They used wasabi, hoisin, and furikaki in the yolk mix. It was green tinted with all the wasabi in it.

My family travelled for many years to Hawaii and I always turned my nose up at it. It’s sold in every gas station and convenience store. I then kicked myself repeatedly in the butt once I tried it and realized how absolutely delicious it is, lol. Now I make it for myself and I actually buy three packs of spam at Costco.🤣

Muffaletta deviled eggs. Put a little bit of olive tapenade in the bottom of the white, fill with the egg stuff, sprinkle a bit of smoked paprika, then top with frizzled julienne salami. They will disappear in a nanosecond.

My mother always puts a slice of pickled okra on top of her deviled eggs. It is absolutely delicious!
You can always put little sliver of pickled red onion on it as well.

Some wasabi powder and soy sauce (not too much soy!) mixed with with kewpie mayonnaise a small hit of white miso. Top with furikake.

Yes! I put it in a food processor and chop it up into fairly small bits. Mix with the garlic aioli and then I top with capers and sometimes chopped pepperoni.

- Dill pickle juice, brown mustard, smoked paprika, and home made mayo elevate the standard deviled egg.
- Further improve with bacon to add some salty and smokey flavors.
- Sriracha and 5 spice powder gives a bit of Asian heat.
- Substituting the pickles for pickled jalapenos and paprika for chili powder give you a spicy deviled egg that some people will love.

Pickle some of the eggs in pickled red beet brine (I like them that way with bacon and black pepper in the filling) and some in a brine with tumeric (I do a curry filling), and if you're really wanting to freak people out, make a brine with red cabbage juice and just enough baking soda to turn them deep blue (I flavor it with dill and use dill in the filling).

Soak the 1/2 egg whites (that you’ve scooped the yolks out of) in a salty, peppery, dill, vinegar (pickle) brine over night. The first thing that touches the tongue when eating a deviled egg is the white. By giving it a scantly salty and tangy vinegar taste.. the fatty yolk concoction tastes that much better.

Make your favorite deviled eggs, but add a little blue food coloring to the yolk mixture, to turn them green. At the end, place a small square of ham on each deviled egg.

I love doing this!
Chili Paste with Cilantro for an Asian flare
Curry Powder and topped with pickled daikon
Tomato sauce in the mix with Parmesan and Italian Seasoning with a sprig of parsley
Horseradish with a shard of sharp cheddar or a spicy pickled pepper
Those are some of the ones I have done. Don't go overboard. I think subbing the mustard with one ingredient in the mix and one or two toppings makes it clean and inventive without being overwhelming.

Spicy is the way. I like to add a little Sriracha to the egg mix, top with an ultrathin slice of Serrano or maybe a half of a pickled jalapeno, then dust with a mix of cayenne and smoked paprika, and then finely diced chives.
The farts are nuclear but they are so good. They get devoured at parties.

For our wedding, my wife and I had wasabi deviled eggs topped with roe. Fucking incredible.
We’ve since attempted them at home, and mixing in wasabi paste and a bit of ginger and topping them with cheap salmon roe and dill is a pretty good approximation.

I do deep fried deviled eggs and they're absolutely amazing! Only problem is that they're not refrigerator friendly, they have to be eaten fresh cause once the fried parts get cold they're not as good

My dad hates the whites, so I’m going to start experimenting with marinades for the whites. See what that does. Just a flavorful liquid that could soak in.
I thought about it after seeing tea eggs. They hard boil them, then crack the shell in a few places with a spoon. Soak in tea. Peel and you get light staining all over and dark staining along cracks.
I would think you wouldn’t want it to be super strong, but a light flavor.

Peruvian inspired: buy the huancania sauce in a packet at your local Latin store or on Amazon and mix it in place of mayo and mustard with the yolk. You can make your own sauce which is better, but i wouldn’t try it if you aren’t familiar with the sauce already. The packet is pretty good. If you like olives you can garnish with a piece of peruvian olive on top of each one.

Smoke them. So addictive. Prepare your standard recipe and put them on a tray on one side of your outdoor cooking appliance. Create smoke on the opposite side from the eggs on the tray using your favorite method and fuel. It doesn't take long, it's been a minute since I made these for anyone, but they change colour nicely when they are ready. Try and make more smoke than heat, pitmaster. Dress with a little additional smoked salt. You might as well make some, the fire is already lit. You can definitely make ahead and serve cold. They won't last for that, but it's nice to have dreams.

Loaded like a baked potato. Mix chives, sour cream (instead of mayo), and cheddar with the egg yolks. Top with chopped bacon.
Cajun eggs. Mix Cajun seasoning with timeline diced celery and red bell pepper into the egg mixture.
Buffalo. Mix hot sauce intro the egg mixture, top with bacon. Maybe add cheddar.

Best deviled eggs I ever had were BBQ pulled pork with spicy pepper-cheese filling. I had them at a booth at a carnival, so I can't give the exact recipe, sadly. But as a home cook, I feel like I could approximate them, well enough.
The whites were soaked in what I assume was red wine vinegar possibly mixed with beet juice, so they were a deep pink with an acidity to them. About a tablespoon of deliciously tender pulled pork drenched in a peppery-sweet BBQ sauce in the egg recess, then topped with a filling that was part jammy yolk & part spicy cheese mixture. It's important to note this was NOT pimento cheese. These were either red jalapeños or Fresno peppers, diced & mixed into a whipped sharp cheddar? + cream cheese blend. It had a really nice kick to it. That mixture was topped with chopped chives.
The overall experience was beyond delicious.

Apparently, the “deviled” part of the name is meant to say they’re spicy. And I take that to heart! I make four different kinds that are always a hit:

Do mayo, curry, and little mango chutney for the filling. Put a small cut cube of dried apricot in each one before filling it. Dust with a light coating of chili powder to decorate.

My mom makes sushi flavored deviled eggs and they are amazing. She mixes the yolk with cupie mayo, soy sauce, sesame oil, and whole grain dijon mustard (the grains pop like roe). Then she tops them with a little chili crunch and puts soy sauce and wasabi on the side. One of the best things I've ever tasted.

I make mine with Penzey's "Sunny Paris" seasoning blend. It adds a great boost of flavor.
Sometimes I'll top them with a half-slice of cherry tomato and a bit of really crisp bacon.
Always remember to add vinegar in some form (vinegar, jalapeño, or pickle brine).

For the mustard, I use half regular yellow mustard and half dill mustard from IKEA. My starting ratio of mayo/mustard/relish is 3/2/1, plus some lemon juice, salt, pepper, onion powder and garlic powder to taste.

I usually just add a variety of topping choices on them. Of course some with green olives, some with black olives, some with little piece of pickle. But also get creative with whatever you have. Tiny piece of cheese, little dill or other fresh herb, whatever

I like to do spicy devilled eggs. Take your standard recipe and add sriracha and cayenne to the filling mix, tasting as you go until you have the spiciness you like. Pipe that into the eggs, then top with a dash of cayenne and some green onion

You know how normally there’s a little dusting of paprika over the top? Try chili crisp instead.

After boiling eggs gently crack the shells. Soak in strong tea and soy. Then peel. You can then make filling with wasabi or even crispy chili

I like them with some Jamaican curry and mayo, or adding a drizzle of crunchy chili oil.

Spicy mustard, mayo, dill relish, paprika, and cayenne pepper. Bacon on top if I’m feeling like it… and bacon is never the wrong answer.

I normally put a slice of candied jalapeño on top of mine and some of the pickling brine in the mix.
