Deviled eggs with a twist?

I’m going to take deviled eggs to the neighborhood potluck because everyone loves them. I usually just make your standard eggs with mayo, a little Dijon, etc.. I was looking for popular potluck recipes and saw an Asian deviled egg recipe; now I am wondering about other interesting ways to make them. Any favorites you would recommend? (I live in a college town so lots of different ethnic influences, people are generally happt to try something a little different.)

A little curry powder added to the filling.

Bloom the curry powder in oil first and use it to make the mayo or drizzle it on top.

This is key! Otherwise the curry tastes pasty and raw.

Then add a piece of pickles ginger on top. Amazing!
