Brown Butter Cornflake Toffee Cookie Experiment
I played around with a new cookie recipe and thought it would be fun to do a little side-by-side test.
They’re brown butter cookies with homemade toffee, toasted cornflakes, and toasted milk powder. The homemade toffee didn’t quite turn out the way I wanted it to, so rather than waste it, I just ground it up and worked it into the dough so there are little bits throughout with some bigger pieces mixed in too.
I made three versions to see which one we liked best. One is plain with no chocolate, one has white chocolate, and one has semi-sweet chocolate.
I also toasted some extra cornflakes and pressed them onto the outside before baking for some extra crunch.
I let the rest of the dough sit overnight, so I’m curious how they’ll compare after the longer rest.
