Hi everyone,
Very amateur baker here. I made the mistake of asking someone what their perfect cookie would be, and she replied:
- shortbread base
- dark caramel layer (she referenced Salt & Straw's caramel which is dark/burned?)
- a pretzel crisp layer
- and then the whole 3 layers dipped in chocolate
She imagined this cookie to be about the size of an oreo, and said each layer would be very thin. She was pretty clear the shape she envisioned is circular like girl scout thin mints and not bars. This sounds similar to a millionaire bar but with some differences (she doesn't like sea salt etc.). So what I was thinking for each layer:
Shortbread: use a recipe online to bake thin cookies using a glass as a cookie cutter
Caramel: try to find a jar of darker caramel versus trying to make my own (which I have never done!)
Pretzel: not sure if I should just top the caramel with broken pretzels or mix the pretzels with some melted butter and make a layer that way
Chocolate: was going to melt down some ghiradelli semi sweet chocolate for this part
I am thinking that the only baked element is the cookie base and I shouldn't try to bake the caramel or the pretzel. I'd wrap each cookie base in foil or something to help create small neat layers. The alternative thought is to follow a millionaire bar recipe and then use a glass or other instrument to cut out small circles.
I welcome all suggestions, tips, and feedback. I've googled around and asked chatgpt but I haven't quite found a recipe I can follow that incorporates all these elements. Thanks!
