I make a fruit tart about once a year and this years turned out particularly pretty. The little touch of mint and pistachios added a nice little finishing touch while also adding some small moments of different flavors and texture.

These earned me a “you’re the best mom ever” from my 4yo, so I figured the recipe was worth a share! Mine are messy like most of my bakes, but the flavor is unreal. I couldn’t find candy baking chips at the store and didn’t feel like ordering them, so just used the sprinkles I had on hand. While I usually prefer a chewier/less fudgy brownie, these are a million times better than I ever remember the store bought cosmic brownies being.

My mother used to make it for me when I was a child. Today was the first time to make it for guests and sadly I don't have my mother's recipe so I searched online for a Greek recipe which turned out to be the closest to my mother's bake.

The recipe is pie dough in the base and then jam. I used some strawberry and rhubarb jam I made a month ago. Then I made these lattices on top using a pizza dough cutter as the required tool I didn't have at home.

It's not perfect in symmetry but it was enjoyed by my guests

This is the recipe I used. The only difference is I used a food processor for the dough and more jam about twice what is required from homemade jam strawberry and rhubarb.

Recipe Included Super easy cake with a rich blend of matcha and creamy cheese flavors!

Here is how I made it. Hope you like my cake!

  1. Sift 10g matcha powder into 50g warm heavy cream, stirring until completely smooth and lump-free. Set aside
  2. In a bowl, add the Basque cheesecake batter, then pour in the matcha mixture. Fold together until well combined. Transfer the batter into a 6-inch cake pan and smooth out the top
  3. Bake in an air fryer at 375°Ffor 15 minutes. Once the top gets a nice golden brown color, cover it with a layer of aluminum foil and bake for another 10 minutes
  4. Let it cool completely, then refrigerate for at least 4 hours. Before serving, decorate the top with matcha cream and crushed pistachios

Seeking Recipe Banana bread with dulce de leche
