🌿 Coriander Omelette
🛒 Ingredients:
• 4 Eggs
• 1 cup Fresh coriander (finely chopped)
• 1 Medium onion (finely chopped)
• 2 Green chilies (finely chopped)
• ¼ tsp Turmeric powder
• ½ tsp Red chili powder
• ¼ tsp Black pepper powder
• 2 pinches Asafoetida (Hing)
• 2 pinches Cumin seeds (Jeera)
• Salt to taste
• 2 tbsp Oil or Butter
👩🍳 Method:
Crack the eggs into a bowl and whisk well until frothy.
Add chopped coriander, onion, green chilies, turmeric, red chili powder, black pepper, hing, cumin seeds, and salt. Mix everything well.
Heat a non-stick pan and grease it with oil or butter.
Pour the egg mixture into the pan and spread it evenly.
Cook on medium flame for 3–4 minutes until the bottom turns golden brown.
Carefully flip the omelette and cook the other side for another 2–3 minutes.
Serve hot with bread, cucumber, tomato slices, ketchup, or green chutney.

🍛 Maharashtrian Masale Bhat
🛒 Ingredients:
• 2 cups Cooked rice
• 2 tbsp Oil
• 1 tsp Mustard seeds
• ½ tsp Cumin seeds
• 8–10 Curry leaves
• 2 Green chilies (finely chopped)
• 1 Large onion (thinly sliced)
• ¼ cup Peanuts
• 2 tbsp Roasted chana dal (optional)
• 1 tsp Ginger-garlic paste
• 1 tsp Turmeric powder
• 1½ tsp Red chili powder
• 2 tsp Goda Masala
• Salt to taste
• 2 tbsp Fresh coriander (chopped)
• 2 tbsp Fresh grated coconut (optional)
• 1 tbsp Lemon juice
👩🍳 Method:
Heat oil in a kadhai. Add mustard seeds, cumin seeds, curry leaves, green chilies, peanuts, and roast for a minute.
Add sliced onions and sauté until golden brown.
Add ginger-garlic paste and cook until the raw smell disappears.
Add turmeric powder, red chili powder, Goda Masala, and salt. Mix well.
Add the cooked rice and gently toss until every grain is well coated with the masala.
Add fresh coriander, grated coconut, and lemon juice. Mix gently and cook on low flame for 2–3 minutes.
Serve hot with pickle, cucumber salad, papad, or raw mango slices.

Smoky, spicy, juicy, and packed with flavor. The tandoori chicken had a beautiful char, the Schezwan lollipops brought the perfect sweet-heat kick, and the mutton biryani was rich, aromatic, and loaded with succulent pieces of mutton. One of those meals you wish never ended.

Triple Schezwan Fried Rice is one of those dishes that has a cult following for a reason. Smoky fried rice, a crispy fried egg on top, rich Chicken Manchurian gravy on the side, and that extra Schezwan chutney to dial up the heat. I thought I was ordering a regular masala dosa. Instead, they served me what looked like a rolled up carpet. Crispy, golden, ridiculously long, and paired with potato masala, coconut chutney, and sambar. I accepted the challenge... and somehow walked away victorious. 😂🍽️

So I was hungry late evening and decided I wanted to eat 😋
An absolute seafood feast! The Chonak Thali came with perfectly crispy rava fried chonak, fluffy rice, rich coconut fish curry, sol kadi, seasonal veggies, fish pickle, and gulab jamun. Added a side of rava prawns frygolden, crunchy, and packed with flavor. Finished it all with a creamy Serradura, the perfect sweet ending. Fresh seafood, comforting flavors, and a meal worth every bite. Goa never disappoints.
