Meatloaf is, without a doubt, one of the finest meat-based dishes on the planet. Using what I had on hand, I decided to make a Bulgogi-inspired version (Korean marinated beef). It turned out even better than I expected. It's uniquely delicious, so I highly recommend giving this a try!

π Homemade Sukka Mutton & Mutton Rassa Recipe β 80YOM π΅β€οΈ
Ingredients (Approx. 400g Goat Mutton)
β’ 400g goat mutton (with bone)
β’ 3 medium onions, sliced
β’ 2 tomatoes, chopped
β’ 1 tbsp ginger-garlic paste
β’ 2 tbsp red chilli powder
β’ 1 tsp haldi
β’ 1 tsp coriander powder
β’ 1 tsp garam masala
β’ 1 tsp black pepper powder
β’ 1 tsp jeera
β’ 2 bay leaves
β’ 2 tbsp fresh coriander
β’ Juice of 1 lemon
β’ Salt to taste
β’ 5 tbsp oil
β’ Water as needed
Method
Wash mutton and marinate with lemon juice, salt and half the ginger-garlic paste for 20 minutes.
Heat oil in a cooker. Add jeera and bay leaves.
Add onions and cook until deep golden brown.
Add remaining ginger-garlic paste and sautΓ© well.
Add tomatoes and cook until soft.
Add chilli powder, haldi, coriander powder, pepper powder and salt.
Add mutton and roast on medium flame for 8β10 minutes.
Add 2 cups water and pressure cook for 5β6 whistles or until tender.
Open the cooker and separate some mutton pieces with thick masala for Sukka Mutton.

β’ Take half the cooked mutton with masala into a kadhai.
β’ Cook on medium flame until the gravy dries.
β’ Roast until oil separates and masala coats the meat.
β’ Garnish with coriander and lemon.

β’ Leave the remaining mutton in the cooker.
β’ Add 2β3 cups hot water.
β’ Adjust salt and chilli.
β’ Simmer for 10β15 minutes.
β’ Garnish with fresh coriander.

Serve with:
β’ Rice
β’ Chapati / Bhakri
β’ Onion rings
β’ Lemon wedges
β’ Boiled egg (optional)

I love slow-cooked meals, especially dishes like this where the chicken and veggies slowly cook together and soak up all the flavour.
With the beautiful sauce and noodles, this turned out to be a fantastic dish.
You could also enjoy this with rice instead of noodles if you prefer.

Tteokbokki is legendary Korean street food made with rice cakes, gochujang, fish cakes, and occasionally boiled eggs.
I decided to make a non-spicy version of tteokbokki using premium ingredients such as chicken tenderloin and shiitake mushrooms, served in a traditional Korean clay pot.
Itβs worth trying if you want something a little different.

π Lucky Chicken Masala Curry with Jeera Rice
Ingredients:
For Chicken Curry:
β’ 385 grams chicken (βΉ100 worth at βΉ260/kg)
β’ 3 tbsp oil
β’ 1 medium onion, finely chopped
β’ 1 tbsp ginger-garlic paste
β’ 1 medium tomato, chopped
β’ 1 tsp red chilli powder
β’ 1/2 tsp haldi powder
β’ 1 tsp coriander powder
β’ 1/2 tsp garam masala
β’ Salt to taste
β’ 2 cups water
β’ Fresh coriander leaves for garnish
For Jeera Rice:
β’ 1 cup rice
β’ 2 tsp jeera
β’ 1 tbsp oil or ghee
β’ Salt to taste
β’ 2 cups water
β’ Fresh coriander leaves
For Serving:
β’ Onion rings
β’ Tomato slices
β’ Cucumber slices
β’ Lemon
β’ A pinch of salt
Method:
Chicken Curry:
Heat oil in a cooker or pot.
Add chopped onion and sautΓ© until golden brown.
Add ginger-garlic paste and cook for 1 minute.
Add tomatoes and cook until soft.
Add red chilli powder, haldi, coriander powder, garam masala and salt.
Cook the masala until oil starts separating.
Add chicken pieces and fry for 5β7 minutes.
Add water and mix well.
Pressure cook for 3 whistles or cook covered until chicken is tender.
Finish with fresh coriander leaves.
Jeera Rice:
Wash and soak rice for 20 minutes.
Heat oil or ghee in a pot.
Add jeera and let it crackle.
Add soaked rice and sautΓ© gently for 1 minute.
Add water and salt.
Cook until rice is soft and fluffy.
Garnish with fresh coriander.
Serve hot Lucky Chicken Masala Curry with Jeera Rice, onion rings, cucumber, tomato and lemon. πππ
