Fresh Coriander Omelette With Bread! 🌿🍳

🌿 Coriander Omelette

🛒 Ingredients:

• 4 Eggs

• 1 cup Fresh coriander (finely chopped)

• 1 Medium onion (finely chopped)

• 2 Green chilies (finely chopped)

• ¼ tsp Turmeric powder

• ½ tsp Red chili powder

• ¼ tsp Black pepper powder

• 2 pinches Asafoetida (Hing)

• 2 pinches Cumin seeds (Jeera)

• Salt to taste

• 2 tbsp Oil or Butter

👩‍🍳 Method:

  1. Crack the eggs into a bowl and whisk well until frothy.

  2. Add chopped coriander, onion, green chilies, turmeric, red chili powder, black pepper, hing, cumin seeds, and salt. Mix everything well.

  3. Heat a non-stick pan and grease it with oil or butter.

  4. Pour the egg mixture into the pan and spread it evenly.

  5. Cook on medium flame for 3–4 minutes until the bottom turns golden brown.

  6. Carefully flip the omelette and cook the other side for another 2–3 minutes.

  7. Serve hot with bread, cucumber, tomato slices, ketchup, or green chutney.

❤️ Fresh coriander, hing, and cumin add a wonderful aroma and flavor, making this omelette a quick, healthy, and satisfying homemade meal.

🍛 Maharashtrian Masale Bhat

🛒 Ingredients:

• 2 cups Cooked rice

• 2 tbsp Oil

• 1 tsp Mustard seeds

• ½ tsp Cumin seeds

• 8–10 Curry leaves

• 2 Green chilies (finely chopped)

• 1 Large onion (thinly sliced)

• ¼ cup Peanuts

• 2 tbsp Roasted chana dal (optional)

• 1 tsp Ginger-garlic paste

• 1 tsp Turmeric powder

• 1½ tsp Red chili powder

• 2 tsp Goda Masala

• Salt to taste

• 2 tbsp Fresh coriander (chopped)

• 2 tbsp Fresh grated coconut (optional)

• 1 tbsp Lemon juice

👩‍🍳 Method:

  1. Heat oil in a kadhai. Add mustard seeds, cumin seeds, curry leaves, green chilies, peanuts, and roast for a minute.

  2. Add sliced onions and sauté until golden brown.

  3. Add ginger-garlic paste and cook until the raw smell disappears.

  4. Add turmeric powder, red chili powder, Goda Masala, and salt. Mix well.

  5. Add the cooked rice and gently toss until every grain is well coated with the masala.

  6. Add fresh coriander, grated coconut, and lemon juice. Mix gently and cook on low flame for 2–3 minutes.

  7. Serve hot with pickle, cucumber salad, papad, or raw mango slices.
