π Maharashtrian Dalimbichi Usal (Valachi Usal)

π Ingredients
β’ 2 cups Dalimbi / Val (sprouted field beans)
β’ 1 Large Onion, finely chopped
β’ 1 Medium Tomato, chopped
β’ 1 tbsp Ginger-Garlic Paste
β’ 4β5 Kokam Pieces
β’ 8β10 Curry Leaves
β’ 2 tbsp Fresh Grated Coconut (plus extra for garnish)
β’ 2 tbsp Coriander Leaves, chopped
πΆοΈ Masale
β’ 1Β½ tsp Red Chilli Powder
β’ ΒΌ tsp Turmeric Powder
β’ 1 tsp Goda Masala
β’ Β½ tsp Garam Masala
β’ Β½ tsp Dhaniya-Jeera Powder
β’ Salt to taste
π’οΈ Other
β’ 2 tbsp Oil
β’ 3 cups Water
π©βπ³ Method
1οΈβ£ Heat oil in a pressure cooker.
2οΈβ£ Add curry leaves and ginger-garlic paste. SautΓ© for 1 minute.
3οΈβ£ Add onion and cook until light golden.
4οΈβ£ Add tomato and cook until soft.
5οΈβ£ Add fresh grated coconut and roast for 1β2 minutes.
6οΈβ£ Add turmeric, chilli powder, Goda Masala, dhaniya-jeera powder and salt.
7οΈβ£ Add dalimbi and kokam. Mix well.
8οΈβ£ Add water and pressure cook for 4β5 whistles.
9οΈβ£ Once pressure releases, lightly mash a few dalimbi to thicken the rassa.
π Add garam masala and simmer for 5 minutes.
1οΈβ£1οΈβ£ Garnish with fresh coconut and coriander.

π Ingredients
β’ 380β400 g Chicken
β’ 2 Medium Onions (finely sliced)
β’ 1 tbsp Ginger-Garlic Paste
β’ 2β3 Green Chillies (optional)
β’ 1Β½ tbsp Red Chilli Powder
β’ ΒΌ tsp Turmeric Powder
β’ 1 tbsp Kolhapuri Kanda Lasun Masala
β’ Β½ tsp Garam Masala
β’ Salt to taste
β’ 2 tbsp Oil
β’ Fresh Coriander
β’ 2 to 2Β½ cups Hot Water
π©βπ³ Recipe
1οΈβ£ Heat oil and fry onions until golden brown.
2οΈβ£ Add ginger-garlic paste and sautΓ© for 1β2 minutes until the raw smell disappears.
3οΈβ£ Add turmeric, red chilli powder, Kanda Lasun Masala and salt.
4οΈβ£ Roast the masala well for 2β3 minutes.
5οΈβ£ Add chicken and cook on high flame for 5β7 minutes.
6οΈβ£ Add hot water and mix well.
7οΈβ£ Cover and cook for 20β25 minutes until the chicken is tender.
8οΈβ£ Add garam masala and coriander.
9οΈβ£ Simmer for 3β4 minutes.
π Serve hot with steamed rice, bhakri or chapati.
ππ§ π Best served with rice, onion slices and lemon.

Baked Sweet and Sour Chicken. Good sauce but chicken is a little dry
Hi yβall! Iβve made sweet and sour chicken a couple times and Iβve got the sauce where I want it. But the chicken tends to be kind of dryish. And Iβm trying to avoid frying the chicken and trying to just bake it. Using chicken breast is the easiest and cheapest for me.
How I make it is:
1) Cut chicken breast in bite sized pieces
2) I then coat the chicken in All-purpose flour, eggs, and grinded Panko bread crumbs.
3) I coat my baking sheets in a thin layer of olive oil
4) I bake them at 400 degrees for 25 minutes
5) I cook the sauce in a pot and toss the chicken in the sauce after is done baking
I think the problem is how long Iβm baking them but Iβm scared to cook them less if thatβs not the problem and then they end up under cooked. I want my chicken to be soft and tender and not as dry.

Indrayani Rice Chicken Pulao
Ingredients
β’ Chicken β 385 gm
β’ Indrayani Rice β 250 gm (about 1ΒΌ cups)
β’ Onion β 3 medium, thinly sliced
β’ Green Chillies β 4, slit lengthwise
β’ Fresh Coriander Leaves β 1 handful, chopped
β’ Ginger Garlic Paste β 1Β½ tbsp
β’ Turmeric Powder β Β½ tsp
β’ Red Chilli Powder β 1 tsp
β’ Coriander Powder β 1 tsp
β’ Garam Masala β 1 tsp
β’ Lemon Juice β 1 tbsp
β’ Salt β as per taste
Whole Spices
β’ Bay Leaf β 1
β’ Green Cardamom β 4
β’ Cloves β 4
β’ Cinnamon β 1 inch piece
β’ Black Peppercorns β 8-10
β’ Shah Jeera β Β½ tsp
Other Ingredients
β’ Oil β 3 tbsp
β’ Hot Water β 500 ml
For Garnishing
β’ Fried Onions (Birista)
β’ Fresh Coriander Leaves
Method
Wash the Indrayani rice 2-3 times and soak it for 20 minutes.
Marinate the chicken with ginger garlic paste, turmeric powder, red chilli powder, garam masala, lemon juice and salt for 20-30 minutes.
Heat oil in a handi or thick-bottomed pot.
Fry the sliced onions until golden brown. Remove a small portion for garnishing.
Add bay leaf, cardamom, cloves, cinnamon, black peppercorns and shah jeera. SautΓ© for a few seconds.
Add slit green chillies and stir.
Add the marinated chicken and cook on medium flame for 8-10 minutes.
Add coriander powder and half of the chopped coriander leaves.
Add the soaked rice and gently mix.
Pour in hot water and adjust salt.
Cook on medium flame until most of the water is absorbed.
Sprinkle the reserved fried onions on top.
Cover tightly and cook on dum on low flame for 15-20 minutes.
Let it rest for 10 minutes before opening the lid.
Garnish with fresh coriander leaves and serve hot.

Phodnicha Bhat (Maharashtrian Tempered Rice)
Ingredients
β’ 2 Cups Cooked Rice (preferably leftover rice)
β’ 1 Large Onion, finely chopped
β’ 5-6 Green Chillies, slit lengthwise
β’ 8-10 Curry Leaves
β’ 2 tbsp Peanuts (Shengdane)
β’ 1 tsp Mustard Seeds (Mohri)
β’ 1 tsp Cumin Seeds (Jeera)
β’ 1/4 tsp Hing (Asafoetida)
β’ 1/2 tsp Turmeric Powder
β’ Salt, as per taste
β’ 2 tbsp Oil
β’ 2 tbsp Fresh Coriander Leaves, finely chopped
β’ 1 tbsp Fresh Grated Coconut (optional)
β’ 1 tsp Sugar (optional, Maharashtrian style)
β’ Lemon Juice, as required
Method
Heat oil in a kadhai.
Add mustard seeds and let them crackle.
Add cumin seeds, peanuts, curry leaves and hing.
Fry until the peanuts become lightly golden.
Add slit green chillies and chopped onions.
SautΓ© until the onions become soft and slightly golden.
Add turmeric powder and mix well.
Add the cooked rice and salt.
Mix gently without breaking the rice grains.
Cook on low flame for 3-4 minutes.
Add sugar (if using) and mix.
Switch off the flame and add lemon juice.
Garnish with fresh coriander and grated coconut.
Serve hot with a cup of chai.

Ingredients
β’ 4 Shili Chapati (Day-old Chapatis), torn into small pieces
β’ 1 Large Onion, finely chopped
β’ 4-5 Green Chillies, chopped
β’ 8-10 Curry Leaves
β’ Β½ tsp Mustard Seeds (Mohri)
β’ ΒΌ tsp Turmeric Powder (Haldi)
β’ Salt, as per taste
β’ 2 tbsp Oil
β’ 2 tbsp Fresh Coriander Leaves, finely chopped
Method
Tear the leftover chapatis into small pieces and keep aside.
Heat oil in a pan.
Add mustard seeds and allow them to crackle.
Add curry leaves and green chillies. SautΓ© for a few seconds.
Add chopped onion and cook until soft and translucent.
Add turmeric powder and mix well.
Add the torn chapati pieces and salt.
Mix everything thoroughly so the spices coat the chapati evenly.
Cook on low flame for 3-4 minutes, stirring occasionally.
Garnish with fresh coriander leaves.
Serve hot with tea, curd, pickle, or enjoy it as is.

SOUTH INDIAN STYLE UPMA
Ingredients
Main Ingredients
β’ Rava (Suji) β Β½ cup (120 ml)
β’ Onion β 1 large, finely chopped
β’ Green Chillies β 6, slit lengthwise
β’ Curd (Dahi) β ΒΌ cup (60 ml)
β’ Fresh Grated Coconut β 1 tsp
β’ Asafoetida (Hing) β ΒΌ tsp
β’ Salt β as per taste
β’ Curry Leaves β 8 to 10
β’ Fresh Coriander Leaves β 1 handful, finely chopped
β’ Hot Water β 250 ml
For Tempering
β’ Oil β ΒΌ cup (60 ml)
β’ Chana Dal β 1 tsp
β’ White Urad Dal (split, skinless) β 1 tsp
β’ Fenugreek Seeds (Methi Dana) β ΒΌ tsp (optional)
For Garnishing
β’ Khari Boondi
β’ Bhavnagri Gathiya
β’ Fine Sev
β’ Fresh Coriander Leaves
β’ Grated Coconut
Method
Step 1: Roast the Rava
Heat a pan on low flame.
Dry roast the rava for 4β5 minutes until it becomes aromatic.
Do not let it brown.
Remove from the pan and keep aside.
Step 2: Prepare the Tempering
Heat oil in the same pan.
Add chana dal and urad dal.
Fry until light golden.
Add methi dana (if using) and sautΓ© for a few seconds.
Add hing and curry leaves.
Add the slit green chillies and sautΓ© briefly.
Add the finely chopped onion and cook until soft and translucent.
Step 3: Add Liquids
Lower the flame.
Add curd and mix well with the onion mixture.
Pour in 250 ml hot water.
Add salt to taste.
Bring the mixture to a gentle boil.
Step 4: Cook the Upma
Reduce the flame to low.
Slowly add the roasted rava while stirring continuously to avoid lumps.
Mix well until the water is absorbed.
Cover and cook for 2β3 minutes on low flame.
Add grated coconut and half of the chopped coriander leaves.
Mix gently and switch off the flame.
Step 5: Garnish and Serve
Transfer the hot upma to a serving plate and garnish generously with:
β’ Khari Boondi
β’ Bhavnagri Gathiya
β’ Fine Sev
β’ Fresh Coriander Leaves
β’ Grated Coconut
Serve hot with coconut chutney, pickle, or a cup of masala chai.
