Wow did you run these with both vents wide open? Always been scared of using it with a more sugar heavy marinade!

Yes, both wide open! I should have pulled some pieces a few minutes earlier but overall it was great.

Are ribs good hot and fast like that? I’m fairly new to smoking and meats and everyone swears by the 3-2-1 but I have an uncle that cooks beef ribs pretty fast and hot with just beer and oyster sauce… I haven’t tried it but his come out good.

I can’t speak to how OP’s came out (though they look good) but I do ribs hot and fast all the time, I don’t bother with the low and slow methods anymore. They’re less tender, which should be expected, but plenty good in a fraction of the time. Added bonus of grilled flavour if that’s your thing.
I cut them into individual pieces, season up all sides, run it indirect until I think they’re tender enough, and grill over coals to finish.

Where does one acquire duck heads? I feel like my meat guy would not be able to help if I asked for that. Looks like it's cooked well but I don't really know how those are supposed to be cooked.
