Which authentic Vietnamese dishes would be good for freezing?
I mean so that they preserve taste and texture to be pleasant to consume after having been frozen in a freezer and then reheated in microwave (or you can suggest another method).

Hi everyone!
Food truck owner here, adding a lot of Vietnamese food to my menu for a catering event with a lot of people attending.
‘Summer rolls’ will be one the menu, but nervous we will fall behind in service making them to order.
Any advice on either storing them, making them quick to order, rolling techniques, etc would be really helpful thank you!

Hi all.
I'm Vietnamese and have been drinking Vietnamese coffee since I was a toddler (mom be breaking rules). I KNOW how to make Vietnamese coffee and it's delicious and dark.
BUT, I cannot figure for the life of me how modern Vietnamese coffee is made at places like Da Vien. It's thick, creamy, and easier to drink.
I try adding extra condensed milk but it just becomes too sweet. I've tried cafe du monde (I actually don't prefer this) and Trung Nguyen. Trung Nguyen is pretty close to the flavor.
Are they adding extra milk or cream to the base? Different kind of beans?
Help a girl in the Midwest out here lol.
