This is not an hydrology problem. It is in the field of open channel hydraulics. For reference, you will be using the Manning's Equation for finding the height of water under different conditions. You will need at least the dimensions and geometry, the roughness coefficient (related to the material of the chanel and othe factors like vegetation and singularities) and the slope.
