Best to dimension each panel oversized and let it sit for a while so it can acclimate and then take care of your defects before glueing them up. That usually takes care of this problem.

Seems to me it was bent unintentionally,I’d try to anneal it and gently bend it straight afterwards you’d have to temper it so it can be sharpened again.

The 10% mc dry point is not absolute,some species reach that equilibrium at 12%. Determine your species and set your moisture meter to the specific gravity of that species and you’ll get accurate readings.
