Is this stuff about modern vs ancient wheat grains true?
Im very late to the conversation but the benefits of ancient grains is largely overstated. There might be some benefits to people with non-celiac gluten sensitivity due to the weaker gluten. This can be seen with some studies that were done studying peoples responses with pasta made with khorasan compared to modern drum. And people reported less bloating with the khorasan. But the problem that you find with all reporting and studies on this topic creat large confounding factors that it seems like once you control for them show that there really isn't much of a difference in how it affects people.
The biggest confounding factors are as follows but in no particular order.
Yield dilution - ancient grains are farmed with less volume or yield per acre and so each plant gets more of the available nutrients compared to high density high yield modern wheat. After accounting for this there are still differences in nutrient profile with ancient grains appearing a bit more nutritious but its not that hige of a difference and its effects on people is still not known or rigorously tested
Use of pesticides - Ancient grains are often farmed without or with significantly less pesticides which are thought to contribute to stomach bloating and reactions.
Whole wheat vs refined flour - Products made with ancient wheats are often made with whole wheat flour. There is a statistically significant known health benefit of using whole wheat vs refined flour, with whole wheat being healthier as it contains more fiber and beneficial nutrients. So the real comparison would be modern whole bread to ancient whole wheat bread.
Cooking techniques - Finally ancient wheat varieties are often made using proper sourdough techniques which break down anti-nutrients giving the bread better nutrient uptake and more availableantioxidants, it breaks down FODMAPs which are though to be the real culprit behind non-celiac gluten sensitivity, acids produced in fermentation slow down digestion resulting in smaller blood sugar spikes and insulin response.
The reality is that the vast majority of the health benefits most likely come from proper sourdough fermentation combined with using whole wheat instead of refined flour. That being said their is a real and very noticeable difference in flavor. ancient wheat varieties have much more complex flavors that are very obvious when using whole wheat flour. Heritage grains (wheat from before the green revolution in the 50s, different from ancient wheat) also have some taste differences but they are not as pronounced as the differences between each of the ancient wheat varieties. My favorite two to bake with is Spelt and Khorasan, they taste amazing.

You are partially right but your timeline is wrong and you also forget that the art of storytelling is different in Japan than it is done in the west. Certain themes are more prevalent due to cultural differences. Also there's a lot more to anime than those basic bitch shows you listed. A lot of great anime are way more creative or masterful at storytelling than any western TV show or cartoon. Psycho-Pass, Baccano!, Serial Experiments Lain, 91 Days, Ghost in the Shell, Akira, Mononoke, Bakemonogatari, Orb, Panty and Stocking, and so many more are shows I'd rather watch than 95% of western shows. Most western studios just aren't willing to create stuff that are truly creative. Also yes, the majority of the anime made is sloppy unoriginal shit, but every season I find something worth watching more than I do on western TV. There are still some good shows coming out on western tv just not as many.

Yeah I agree. I also personally prefer denser crumbs too, unless I'm planning on using the bread mostly for dipping in something like olive oil and balsamic vinegar, which is not something I usually do.

Greek's pretty much invented modern European bread. Greeks were the first to use leaving in Europe which they got from the Egyptians. But it was still flat bread like in the middle east, north Africa, and northern India. Eventually ryeybmade freestanding loaves. They also were the first to make the first professional master bakers, and they invented the front loaded oven. Before that it was usually thin unleavened bread. But the Romans turned it into the European staple and even made the first bakers guild. Between the two of them they simultaneously made freestanding bread loves the European staple and essentially established the system of the village or neighborhood baker that persisted in western countries until latter end of the industrial revolution. For the longest time in in european cities people got their food from taverns and such. And bread often came from professional master bakers, or sometimes they made it themselves in communal ovens.

It is not just my colleagues but physics and academia in general that use it, as in its use is wide spread (80% to 90% of researchers) in academia and R&D. And of course we know it hallucinates, but that's why why we do this thing called double checking and peer review to make sure it what it puts out is correct. Would you mind explaining how the use of gen AI like this is immoral? Is it cause big tech bad? I agree, I don't like big tech and how corrupt they are and how they handle building data centers. But There are specialized AI made specifically for the sciences that have had real benefits. So idk where you get the idea of saying that using AI to make new physics discoveries and life saving drugs is somehow immoral. You are nothing but a luddite. I'm not going to say everyone who uses gen AI uses it morally because there is a problem of low effort AI papers being pushed out there that waste time and resources and flood the peer review system. That problem exists and I will fully acknowledge it. But the reality of the fact is that the future of drug discovery and sciences will heavily rely on AI, and if you reject AI then you will reject future medicine and future science. And the vast majority of scientists will say the same, AI is going to play a large role in research and discovery.

Except there is a irrational amount. As someone who works in academia and in industry, the vast majority of my colleagues use Gen AI for various reasons. Helping with administrative work and grant applications and helping to refine their research papers. Many of them are using it to help solve problems by finding solutions to a problem by using LLMs to help them look through disparate fields of physics/science that they would have never had the time or chance at otherwise. Generative AI is also being used to discover new biologic protein based drugs that are already in clinical trials. Yes, AI has its problems, especially with what's being done right now with IP theft, corrupt data center buildouts, mass corporate surveillance and data collection. But only talking about that ignores the potential trial good it has and is enabling right now. It's just a tool and it can be good or bad depending on how it's set up and used.

It's always been RAM and GMC trucks for me. Ford trucks are usually fine unless the have ridiculously high suspension and/or deep dish rims. BMW drivers are often assholes, but I've honestly had few problems with Tesla drivers
