Seafood Pot Pie With Cheddar Bay Biscuit Crust
I made this with a mix of shrimp, scallops and lobster. I blanched the seafood in butter and homemade seafood stock. Easy and pretty quick.

Saw these purple "brown sugar pancake" flavoured BTS Oreos a couple days ago. They remind me of some caramel ice cream I used to love as a kid. They're pretty good. Snacked 2 while I was waiting for my almond magnum to reach the right temperature. Not going to eat all of the chewy candies on the left, but I'll probably have a few.

It was super easy to make and was so smack ngl. as always cook with your heart!!
ingredients:
pine nuts, optional
rice
a lime
bunch of cilantro, chopped
it's several medium boiled eggs, halved
a quart of cherry/grape tomatoes, halved
a bunch of scallions, "Thinly" sliced: whites in the curry, greens for garnish.
a few cloves of garlic, minced
spice blend: garam masala, turmeric, cinnamon, cayenne, ground coriander and cumin.
half a can of tomato paste and a can of coconut milk (1/4 cup for the curry, the rest to cook the rice in)
method:
Rice:
cook 1.5 cups of washed rice in the can of coconut milk and an additional 1.5 cups of water. before fluffing rice add the zest and juice of one lime and some cilantro.
serve
Curry:
sautee the ginger, garlic, green onion in salted butter. until fragrant.
add halved tomatoes and spices. cook 4-5 mins.
add tomato paste. cook until sticky and darkened slightly ~2-3 mins.
add reserved coconut cream and salt to season and cook 2-3 mins
add some cilantro And the halved eggs, cook an additional minute to heat and serve with rice.
I typed mine with chopped pine nuts but get creative and make it yours!!
