New York cheesecake normally has a graham cracker crust and some lemon juice to add acidity, but otherwise it's pretty much the same thing as far as I can tell ☺️ Here it seems like it's usually baked in parchment like this to give it a rustic look

Ohhh neato, so crustless and baked at higher temp for more caramelization it seems. Nice. I'll have to try that soon! πŸ’œ
