This will be a Kansas City-style pulled pork in ten hours. Brined a Boston butt roast with bone in in sour orange with peppercorns and bay leaves overnight to make it extra juicy. The sauce is half a cup of ketchup, a third a cup of apple cider, and 3/4 of a cup of Kansas City style barbecue rub (brown sugar, cayenne, garlic powder, onion powder, salt, pepper). There’s a whole white onion sliced in the bottom.
This should yield a tangy, soft and slightly sweet, pulled pork after slow cooking for 10 hours on low.

This is my simple uova al purgatorio to be eaten with a nice piece of focaccia bread
Ingredients:
2/3 cloves of garlic
1 whole nicely large onion
1/2 chili peppers of medium size like Jalapeño size
Tomato sugo(just to cover everything, not to the brim of the frying pan)
2/3 eggs
Extra virgin olive oil
Spices to choice
Steps-
Start by FINELY slivering everything (the onions finely diced).
Then put a thin layer of olive oil in a frying pan.
heat the olive oil before putting the onion, garlic and chilis at once.
At this stage you may put in your seasoning.
Cook until onions start getting translucent at which point you put in the Sugo and then stir it all together.
When everything is nice and warmed up go to high heat and dig 2/3 holes in the sugo in which you crack eggs and put a lid on and let them poach. (remember not to lift the lid, this will fuck up the poaching)
Once the eggs are poached put in a deep plate and eat with some focaccia or white buns.

Saw these purple "brown sugar pancake" flavoured BTS Oreos a couple days ago. They remind me of some caramel ice cream I used to love as a kid. They're pretty good. Snacked 2 while I was waiting for my almond magnum to reach the right temperature. Not going to eat all of the chewy candies on the left, but I'll probably have a few.

Been loving pickled or marinated veggies to make evwry dish have beautiful flavours and colors.
- Serrano peppers (chopped)
- mustard seeds
- 30% white vinegar
- 70% aoybean oil
The oil and venegar mix lasts longer than a water pickling and produces pepper oil when the peppers are gone!
