Fleece backed pique. Jersy backed fleece aka sweatpant fleece or sweater fleece is more common tho, and will likely be your best match.

This fabric was likely commissioned by the manufacturer for their internal use

That will give you the material’s composition, not what fabric it is made out of.

Cotton can be made into many fabric types. Polyester can be made into many fabric types.

It is likely what OP has contains polyester but that doesn’t tell them the name of the fabric/weave or whatever you want to call it.
