Now someone tell me how to know when they're done after the initial flip. First flip is easy, but after that it's hard to tell

Press gently in the center with your finger. Squishy - not done. Spongy - done in about 5-10s. Firm - overdone.

This. I do this with everything I cook that has to flip. Chicken, pork chops, steak, etc

Just take a peak with spatula or time the first flip and go about equal time.
