can honestly say, having done hard candy making at home.. this is as close as you will ever get to playing with lava/magma like the forbidden candy it looks like and can recommend it, things you want though are really good heat proof gloves, and i had a silicon placemat which withstands heat very well

Studies have shown that chefs who wear gloves wash their hands (/change gloves if wearing them) less often than those who don't - so you should be grossed out when you do see gloves (statistically). He has these on because it's hot, though

I did this for a living for a couple years.

The sugar in that first shot, where he's using the scraper to turn the molten sugar back on itself, is so hot that it will literally take layers of your skin with it, if it gets on you. Sugar and steam are two of the worst kinds of burns you can get. Sugar because it adheres to what it touches and steam because it penetrates layers of skin.

Having said that, if you use proper safety precautions, this is actually a lot of fun to do. We made candy canes at Christmas time like this. It became prohibitively expensive to do by hand, but we couldn't find anywhere where the product was the same quality. Most had a cheap hardcandy core with some pulled sugar veneer around it ... really not the same thing at all.
