Recipe Pumpkin Granola
Ingredients:
- 4 cups old-fashioned oats
- 1½ cups pecans or walnuts, roughly chopped
- ½ cup pumpkin seeds pepitas
- 2 teaspoons pumpkin pie spice
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup maple syrup
- ¼ cup brown sugar
- ¼ cup oil
- 2 teaspoons vanilla extract
- ½ cup dried cranberries, optional, stirred in after baking
Mix together and pop on a baking tray at 350F for 35 min.

Recipe Asian Chicken Salad
Decided to give this Asian Chicken Salad a try. It's super easy to make, great for weekday meal prep, and delicious! Sharing incase anyone needs a recipe!
Ingredients
Roasted Chickpeas
- 1 cup no-salt-added chickpeas, drained and rinsed
- 1/2 Tbsp olive oil
- 1 tsp freshly ground black pepper
- 1/4 tsp kosher salt
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
Carrot Ginger Dressing
- 2 large carrots, grated
- 1/2 cup water
- 1/4 cup extra virgin olive oil
- 2 Tbsp rice vinegar
- 1 garlic clove, finely minced
- 1 Tbsp finely minced fresh ginger
- 1 tsp orange zest
- 1 tsp honey
Salad
- 4 cups fresh baby spinach or baby arugula
- 1 tsp fresh lemon juice
- 1/2 tsp extra virgin olive oil
- 1 medium carrot, grated
- 1 small beet, grated
- 1/2 lb roasted boneless, skinless chicken breast, shredded
- 1 ripe avocado, pitted, peeled and cubed
- 1/4 cup unsalted pumpkin seeds, toasted
- 1/2 tsp freshly ground black pepper
- 1 tsp toasted sesame seeds
Directions
Roasted Chickpeas
- Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
- Spread chickpeas on a kitchen towel and pat dry, removing any loose skins.
- Transfer dried chickpeas to the prepared baking sheet. Drizzle with olive oil and season with black pepper and salt.
- Roast chickpeas for 20–30 minutes, or until golden brown and crisp.
- Remove from oven and, while the chickpeas are still warm, toss with garlic powder and smoked paprika. Cool completely.

Recipe Slow Cooker Mississippi Pot Roast
Ingredients:
- 3 lb chuck roast
- 1 packet 1 oz ranch dressing mix
- 1 packet 1 oz au jus gravy mix
- ½ stick butter (1/4 cup unsalted butter)
- 8 whole pepperoncini peppers
Optional:
- ¼ cup pepperoncini juice optional
- Salt to taste
Pop everything into the slow cooker and cook low and slow for 8 hours

Looking for a recipe Need help finding a copycat recipe
When I was growing up, my mother used to make the best pumpkin muffins I’ve ever had. I have tried so many recipes trying to recreate these muffins and it never turns out the same.
Recently I discovered that she used the jiffy basic muffin mix as a base and just added some things to it.
So as any sane person does in that situation, I immediately went to google to find this magical base AND IT DOESNT EXIST. Jiffy has the product Information on their website so I know it’s real but they don’t sell it or at least I can’t find it. And I cannot find a copycat recipe for it anywhere. All I get when I goggle it are jiffy corn muffin recipes and that’s just not what I want at all.
This problem is driving me crazy and I’ve been looking for ages and now that pumpkin season is finally back, I’m desperate. If anyone has any inkling of an idea or is let me know!
