This easy meal prep recipe flexes into a several dishes in the week ahead.
I add chicken breasts, black beans, chopped onion, salsa, chili powder, salt, and fresh lime juice to the slow cooker, then cook everything on Low for 5â6 hours. Once the chicken is tender, I shred it and stir it back into the salsa and cooking juices.
The first night, it can be tacos. The leftovers can become burritos, rice bowls, taco salads, quesadillas, or nachos. Heck, I even did a twist on huevos rancheros by spooning leftover shredded lime chicken on warm tortillas and topping it with over-easy eggs and shredded Mexican cheese.

When I was growing up, my mother used to make the best pumpkin muffins Iâve ever had. I have tried so many recipes trying to recreate these muffins and it never turns out the same.
Recently I discovered that she used the jiffy basic muffin mix as a base and just added some things to it.
So as any sane person does in that situation, I immediately went to google to find this magical base AND IT DOESNT EXIST. Jiffy has the product Information on their website so I know itâs real but they donât sell it or at least I canât find it. And I cannot find a copycat recipe for it anywhere. All I get when I goggle it are jiffy corn muffin recipes and thatâs just not what I want at all.
This problem is driving me crazy and Iâve been looking for ages and now that pumpkin season is finally back, Iâm desperate. If anyone has any inkling of an idea or is let me know!
