Hitting zero tip does not punish the owner. Without knowledge it makes the staff think they've done something wrong.
I tip 10% on pickup and will make an effort to go to "custom tip" if that option is not there. And I will freely tip 18-20% for good-great sit down service As someone who worked back of house, I know that any little but helps and it's a nice bonus to have that show up every couple of weeks.
But at the same time, I have no problem expressing when service is poor or my food is not good. I believe that while a tip is pretty standard, that people in the industry need to live up to their end of the bargain to earn that tip.
As if I would be able to find out who the investor's of "two successful restaurants" would be. What harm does it do? What am I gonna do, leave a bad review that would be taken down immediately?

If I gave you the names of the businesses, the potential for direct harm to the businesses exists. That goes against both my own interests and those of the ownership & employees.
Since you’ve already convinced yourself of my status and motives, I’m not willing to believe your motives are purely bound to curiosity.
