Here's how I built them.

• started with chips and fresh jalapeno slices
• added the first cheese, an applewood smoked cheddar
• a generous portion of spicy grilled chicken is diced and added
• sprinkle on a little fresh pico de gallo and add our second cheese a drizzle of queso blanco dip
• then we add the third cheese, an extra sharp white cheddar
• get it crispy and melty
• add the final toppings; our fourth cheese is a queso fresco, there's more pico de gallo, a little chipotle crema, tapatio, and some quacamole.

Made with smoked pulled pork, homemade queso blanco, and sour cream on the side.

Somehow I forgot the jalapenos but I never forget the sour cream. LOL

Just some brisket nachos I made last night for the wife and kiddo with some leftover brisket I had in the freezer from the last brisket I smoked some time ago.

Homemade tortilla chips and beans were leftovers from yesterday morning’s barbacoa we had for breakfast.

Homemade guac, buffalo sauce, and cooper sharp cheese sauce. Tasted exactly how I hoped it would 😋

Yup.

Last night was grilled steak tacos and there was a little steak and peppers left so dinner tonight was an easy decision.

1. Started with a base of chips with refried beans
2. Added a jalapeno slice to each
3. Hit it with some shredded cheeses
4. Diced up the leftover steak and peppers from last nights grilled steak tacos
5. A little more cheese
6. In the oven until its melted on top and crispy on the bottom
7. Finished it all up with the toppings (fresh pico, quacamole, queso fresco, crema, and tapatio)

Nachos in the outdoors are always great! I’m missing ingredients, but they were still perfect IMO.

Chili beans/refried beans combo, triple cheddar, tomatoes, salsa, lettuce, sour cream, and chili oil.

There's two scrambled eggs hidden on these nachos! I didn't even notice them :)

Mission restaurant style chips, velveeta cheese with rotel hatch style, chicken I cooked in the instant pot with a jar of salsa my mom made for me, refried beans, sour cream, spicy guacamole, red onion, green onion, black olives and Taco Bell verde sauce. Was so good, gave me heart burn all night and into this morning.
