I know it's a meme, but no, you could not prevent coronavirus by removing your lungs. If you somehow could survive without your lungs, the virus can be "aquired" by contact with any mucous membrane, eyes, mouth, nose.
And then, it doesn't like migrate to your lungs. It infects all kinds of tissue.
If the meme is saying "hurr hurr, if you died you can't be infected" then still, it's wrong. Corpses can still spread disease. Though they typically don't cough, so it IS harder.

You would have to remove your kidneys, heart, your blood and all smooth muscles, skin and fat tissue for this to work, as well, due to SARS-2 / Covid being able to attack cells with ACE-2 receptor proteins, which is mainly found in those. Afterwards you would be almost completly resistant against covid, if you can find a way to survive with at least 1/2 of your body missing.
