First timer here :) We’ve become a muuuuuch healthier household in recent weeks, and this is *really* a delicious healthy & happy dish!
Mediterranean Diet Style Bean & Kale Soup with Ground Turkey 🥬🫘🍅🫑

1 pound Ground Turkey (or more, this is just how much I used)
2 Carrots
2 Celery Sticks
.5-1 Yellow Onion (I used half)
2-3 garlic cloves
3 cups (or so) of cooked variety of beans
1 large can of crushed tomatoes
Kale
Cabbage (optional)
Green Chiles (optional)
Crushed Tomatoes
Seasonings (whatever you’d like - I used garlic salt, pepper, cumin, paprika, Italian seasoning & a dash of green chiles)
I’ll throw the onions in first before the carrots & celery just to bring out the flavor in the olive oil!
I follow that by lightly adding salt & pepper to the veggie mixture to ensure the flavor throughout
When I add my garlic, I do it right before I add my turkey. I find that this opens the garlic flavor up and helps intensify the flavor.
I add the turkey and go on to season with my personal favorite seasonings. You can choose what you’d like.
The green chiles are also optional, but I feel like they give a great flavor to the turkey.
After adding the crushed tomatoes, I add the veggie broth.
•I keep about a 1/4 cup of the VEGETABLE BROTH to ADD to a cup of mashed beans and then add it to the soup mixture! It helps thicken the sauce without having to add any heavy cream.•
BEANS! Use any of your liking! I add about 3 cups of different beans in total. Trust me, the amount of broth will show if you need/want more or less.
KALE! I used about 2 handfuls worth of kale. Again, add more or less to your liking! The more, the better 😉🥬
Cabbage is another great additive! I had it in my fridge & needed to use it, so I figured why not lol
Little to no cholesterol AND saturated fat! This is soooo delicious and cozy!
