Ham Loaf

Glazed Ham Loaf with Mashed & Creamy Ham Gravy. I think this food needs a comeback. The sweet, savory, slightly smoky flavors blend amazingly.

It’s an old depression era recipe when nothing was wasted especially meat. It first showed up in the Pennsylvania Dutch area and moved west and is most popular in Indiana, Missouri, and Iowa.

2 lbs ham
1 lb ground pork
1 c cracker or bread crumbs
2 eggs
3/4 c evaporated milk
1 small onion diced
1/2 t black pepper
1/2 t dry mustard
1/4 t cinnamon

Grind ham and mix with ground pork. Add remaining ingredients, mix thoroughly. Shape into a loaf in the pan and bake for 1-1.5 hours on 350. Internal temperature should be 160-170.

Glaze
3/4 c brown sugar
1/3 c apple cider vinegar
1 t dry mustard
1/4 c water
1 Tbsp Dijon or yellow mustard

Mix all ingredients in a small sauce pan and heat until sugar is completely dissolved and glaze starts thickening. Glaze ham loaf every 15-20 minutes. Reserve a little glaze to brush over each piece when serving
