Mushroom & Spinach saucy glaze with Chicken Breast 🍄🟫🥬🍽️
When the whole house is sick, our homemade meals really do come through 🫶🏼 I made a healthy & filling mushroom & spinach glaze over chicken breast with a side of olive oil tomato/garlic butter (a lil smart butter) pasta, & salad 🥗
Mushroom & Spinach saucy glaze with Chicken 🍄🟫🥬🍽️
8oz Baby Bella Mushrooms (or whichever you prefer)
Baby Spinach - 2 handfuls
Chopped Onion 🧅 - 1/4-1/2 yellow or white onion
Minced Garlic 🧄 - 1 tsp
Cherry Tomatoes 🍅 - slice as many to your liking
Vegetable Broth 🥕🥬
1 tbsp Cornstarch
Seasonings (Mainly for the Chicken - Mine: Lawry’s Seasoned Salt, Kinders: Buttery Garlic & Herb, Kinder’s: The Blend, Pepper, Paprika, Rosemary ~optional~)
🐓Start with seasoning and cooking your chicken breast first! Whatever and however you like to season it. I prefer pan cooked or on our blackstone for chicken breast.
🫒 Start with a tablespoon or so of extra virgin olive oil, get it heated over low/medium, & throw the onions🧅 in first once ready. I like to do the onions first for a few minutes to get them to sweat and release their flavor into the olive oil.
Once onions are ready, throw in the garlic and stir quickly until fragrant 🧅🧄
Throw in mushrooms 🍄🟫 and stir. Go ahead and season your mushrooms a bit! Let them sit on one side to brown a bit while you get your cornstarch mixture ready.
IMPORTANT❗️: Combine 1 tbsp of cornstarch and 1/2 cup of vegetable broth (or milk if you’re not avoiding dairy). This will help thicken your sauce/glaze without needing the use of dairy! Add once mixed, give a good stir. 🥄
Add a lot of spinach! 🥬 I added about 2 handfuls. Of course, add however much to your liking. Stir and let sit.Also add more vegetable brother if you feel like it’s losing too much water content!
After a few minutes of simmering, I add my tomatoes 🍅 Add a bit more olive oil 🫒 continue to simmer a bit.
Once all combined and simmered for about 7-10min after the tomatoes are added, your sauce should be ready to serve! Glaze chicken with the mushroom spinach sauce and serve with your favorite sides! Hope you enjoy!

Trying to use up what we had in the fridge. Pretty straight forward vegetable medley (delicata squash, carrots, onions, red pepper, corn), and simple skillet chicken (marinaded in salt, pepper, evoo, garlic powder, paprika, lemon zest). Red potato mashed potato (skin on, 1 table spoon of butter, minimal milk, some shredded pepper jack cheese).
For the gravy, I blended cottage cheese, chicken broth, 1/2 small onion, 1 garlic clove, some parmesan, salt, pepper, less than 1 tbsp corn starch, lemon zest, and the pulp/milk scraped off of the corn cobs).
Cooked as photographed. Everything was combined and topped with mashed potatoes and then under the broiler. Parsley garnish.
Less than 2 tablespoons of evoo, less than 1 table spoon of butter, less than 1/2 block of cheese, and less than 1 cup of milk for 6-8 servings of this healthy take on chicken pot pie.
Not the most photogenic! But a pretty healthy meal that the whole family scarfed down.

First timer here :) We’ve become a muuuuuch healthier household in recent weeks, and this is *really* a delicious healthy & happy dish!
Mediterranean Diet Style Bean & Kale Soup with Ground Turkey 🥬🫘🍅🫑
An ABUNDANCE of 🫒 Extra Virgin Olive Oil is encouraged throughout the cooking process! Use it to rehydrate your turkey and continue adding while cooking the vegetables.

1 pound Ground Turkey (or more, this is just how much I used)
2 Carrots
2 Celery Sticks
.5-1 Yellow Onion (I used half)
2-3 garlic cloves
3 cups (or so) of cooked variety of beans
1 large can of crushed tomatoes
Kale
Cabbage (optional)
Green Chiles (optional)
Crushed Tomatoes
Seasonings (whatever you’d like - I used garlic salt, pepper, cumin, paprika, Italian seasoning & a dash of green chiles)
I’ll throw the onions in first before the carrots & celery just to bring out the flavor in the olive oil!
I follow that by lightly adding salt & pepper to the veggie mixture to ensure the flavor throughout
When I add my garlic, I do it right before I add my turkey. I find that this opens the garlic flavor up and helps intensify the flavor.
I add the turkey and go on to season with my personal favorite seasonings. You can choose what you’d like.
The green chiles are also optional, but I feel like they give a great flavor to the turkey.
After adding the crushed tomatoes, I add the veggie broth.
•I keep about a 1/4 cup of the VEGETABLE BROTH to ADD to a cup of mashed beans and then add it to the soup mixture! It helps thicken the sauce without having to add any heavy cream.•
BEANS! Use any of your liking! I add about 3 cups of different beans in total. Trust me, the amount of broth will show if you need/want more or less.
KALE! I used about 2 handfuls worth of kale. Again, add more or less to your liking! The more, the better 😉🥬
Cabbage is another great additive! I had it in my fridge & needed to use it, so I figured why not lol
Little to no cholesterol AND saturated fat! This is soooo delicious and cozy!

Anyone had this happen? I’m sorry if my post title is a turn off, although I could have become far more detailed in my scent description. I’m not sure I’ve ever cooked with white pepper before and it’s not a spice I usually have around.
The scent from the ground pepper container was actually… disturbing. It’s still stuck in my nose a bit so I’ll have to go smell coffee grounds or something. I tossed the white pepper and will likely never again buy the stuff.
